Ambitious in the Kitchen

I was a little ambitious in the kitchen this weekend.  I didn’t try anything too crazy, but I did a good bit of cooking.  Luckily some friends invited Kevin and I out to dinner Friday night.  It’s so nice to be waited on for a change!

Sadly, those chose On the Border, which is the most pitiful excuse for Mexican food I’ve ever seen.  My chicken fajitas were tasty, but the chicken wasn’t… well… chicken.  It was a wonderfully marinated yet totally fabricated and processed piece of tasty rubber.  You know how on lots of grocery store packaged chicken it says, “contains 10% solution.”  (not exactly sure of the number)  On the Border’s chicken is more like, “solution containing 10% chemically separated chicken mixture.”  I digress…

I whipped up some eggplant Parmesan rollatini for dinner Saturday, and it was fantastic.  I’ve made it once before, and this recipe‘s is obviously a keeper.  My recommendations are to let your sliced eggplants sweat a bit prior to roasting, don’t put hardly any oil on the eggplant while roasting, and use fat-free ricotta but full-fat mozzarella and parm.

Sunday was food-prep day.  As you can see, I was a bit overambitious…  Pair all this with baking chicken in the oven that I’ll use to top my lunch salads all well.

In the slow cooker was this vegetable and garbanzo curry recipe for Kevin’s lunch, along with rice on the stove.  In the food processor were my variation of these spiced red lentil chickpea cakes.

Thank goodness the afternoon allowed for a bit of R&R.  It rained all day, and I figured that called for some light reading, kitty snuggles, and a big ol’ chocolate muffin from the health food store.  (Note:  That does not make it a healthy muffin… womp womp.)

Work Hard, Rest Hard

Word Hard, Play Hard.  That’s how the phrase goes, right?  Well, that’s not how it went down at my house.  Kevin and I worked hard all week, and then we rested hard… or at least a lot harder than we usually do.

I probably should have taken a rest day on Friday, but I didn’t realize it until I was already at the gym.  I powered through a hard workout, and then I kept the workouts light over the weekend, a three-mile walk Saturday and again on Sunday.

Kevin, on the other hand, worked really hard at work.  The poor guy didn’t get home until 8:30 at night on Friday, and then he had to return to the office on Sunday.  Hmmm… I’m not too sure I like this new job of his.

Luckily we caught a break after Kevin returned from work Saturday.  We tried a new restaurant with another couple, and if you’re in the Charlotte area, I thoroughly recommend it.  It’s called Deejai Thai, and sadly I didn’t get a picture of my amazing panang curry.

On Sunday, we had great weather, so I enjoyed a little rest n’ sunshine.  Of course, I later got to work in the kitchen.  Sunday fun-day turned into Sunday prep-day.

At least part of my kitchen time paid off.  Mmmmm…. beeeeeef.

Not a bad weekend!  Even with a the rest I got, I think I could still use a few more hours this morning.  Who’s with me?

I’m Cooked

I’m cooked from cooking.  I often forget just how much a long day in the kitchen wears me out.  By the time I finished cleaning up dinner last night, I didn’t even want to look at my kitchen again for the rest of the week!

Saturday started with a run, among other things.  I came upon a cross country meet mid-run.  Oh how it made me miss my cross country days!

All this cooking started when I made a couple batches of jalapeno corn muffins to bring to an LSU vs Bama viewing party.  Kevin and I enjoyed some Louisiana home cookin’ and beer.  Mmmmmm!

Then Sunday included food, food, and more food.  I planned food over breakfast, then shopped for food after church.  I also got the crock pot going with my lunch for the week.

Since I’m the nicest wife ever (ahem…), I made Kevin’s lunch too.  It’s an eggplant bake with onions, spices/herbs, tomato sauce, cheese, and arborio rice.  Yup… I was pretty jealous of that one!

It wasn’t too much later that I started on dinner.  It was a side salad with butternut squash pasta.  Deeeeeelish!

Will it all be worth it this week?  Perhaps.  Am I still avoiding my kitchen as much as possible?  You betcha.

Weekend Rewind

Why did the weekend have to end? Ever? Sigh… I think someone’s got a case of the Mondays…

Instead of being bummed about sitting in my cubicle for the next 5 days, I think I’d like to re-live some weekend fun. Thursday, Kev and I celebrated IPA Day with friends. Friday, we grilled out with neighbors. Mmmm… burgers. Saturday, we had a date day. I know you all are probably familiar with “date nights,” but this was sort of an extended version.

We started with some of this:

I had an Old Hickory Hefe with my pizza. I do not recommend it. I also wasn’t all that crazy about my pizza (caramelized onion, prosciutto, and kalamata olives – thought it would have been better). What I did like – the restaurant had half-pints of beer. I got to try 2 beers but only had the quantity of one. Score! Kev liked his pizza:

So to make up for pizza mediocrity, I stopped here on the way home.

Kev doesn’t eat sweets, so he didn’t get any frozen yogurt. I used to feel like a fat kid when he made me get ice cream alone… I got over it.

Last but not least, I defied my podiatrist’s orders Sunday. A girl can’t wear sneakers to church ya’ know!

So that was the weekend in a nutshell. I hope this upcoming weekend is a little healthier. Couldn’t be toooo much worse, right? :) Stay tuned this week, I’m starting a new workout and have a new lunch bowl recipe.

Belated Weekend Recap

I know that weekend recaps usually occur on Mondays, but this one is a little behind.  I really wanted to post my new workout the very same day I started it. 

As you probably know, Kevin and I hosted company this weekend.  I didn’t get to try any of our visitor’s home brews, but he left a few for Kevin and I in the fridge.  Yawhooo!  If you all ready Saturday’s post, you know there’s another timebomb in my fridge.  It’s crazy, but I didn’t get into that either even though it’s my favorite beer.

So what did I do?  I’ll show you through a lens.  Naturally, the pics focus on the food and drink of the weekend, but I don’t think you really want pictures of me grocery shopping and cleaning my house.  Didn’t think so…

On Saturday, we went here:

The local brewery also offers some food in their taproom, so the guys ate lunch there.  I, on the other hand, checked the menu online before we left and saw no healthy options, so I enjoyed a pb n’ jelly sandwich on the way.

On the way home, we stopped by here and got these.  I’m not even a fan of buffalo blue cheese chips, but I had a couple anyway.  Fail.

We stopped by a beer store on the way home, and Kevin picked up a six pack.  I wanted a pack of non-alcoholic beer, but the shop didn’t have any that was cold.  Bummer.  I stuck to water until dinner.

Speaking of dinner – the picture says it all.

*** I totally switched gears Sunday, and my heart/kidneys/liver thanked me. ***

I ate TJs raisin bran for breakfast with almond milk and black coffee.  I cleaned all day, except for when I took a trip to TJs.  My body was tired, and my feet were hurting!

Kevin and I both had grilled eggplant, grilled onion, spinach, and hummus pressed in a wrap for lunch.  (Not Pictured)  It was so tasty I made mini ones after without the wrap.  Aren’t they cute!?!

For dinner, I made scallops for the first time.  Scallops, grilled eggplant, red onion, orange bell pepper, and of course, olive oil.  It was totally fusion and totally rockin.  I served Kevin brown rice with his.  Oh, and we split a mango for an appetizer.

scallopsThis was so good!  I cooked the rest of the scallops again last night, but I served them with the rest of the black beans, brown rice, spinach, onions, lime, and cilantro.  I put the cilantro with most of the spinach and the juice of half a lime in the food processor so that it would mix well with the beans n’ rice.  Another interesting dish.
