Happy Fat Tuesday!

Happy Fat Tuesday! Would you believe I’ve never been to Mardi Gras? It always looks like such a fun party. Perhaps one day I’ll make it there… or maybe not.

Even though it’s Fat Tuesday, I’m { trying } to keep things pretty lean here. It’s not like I’m giving anything up for Lent, so there’s really no change here.

Of course, I’m still celebrating in my own way. On Sunday night, I made a bayou themed meal in honor of the occasion. It’s extremely simple, so I didn’t plan on posting a recipe. However, it turned out really yummy! I decided it was share-worthy after all.

Ingredients

  • 1.5 tbs butter or oil (I used Earth Balance spread.)
  • 1 large onion, diced
  • 2-3 stalks celery, diced
  • 1 bell pepper, diced
  • 1-2 cloves garlic, minced
  • 1 tbs salt-free Cajun seasoning
  • 2 tsp red pepper flakes (optional – per your taste)
  • 1 28 oz can salt-free diced tomatoes, with juices
  • 1.5 cups water
  • 2 cups brown rice
  • 2 15 oz cans kidney beans, divided
  • hot sauce for topping (optional – we used Emeril‘s)

Directions

  1. Heat oil/butter in a large pot over medium. Add onion and saute until softened. Add celery, bell pepper, and garlic. Continue cooking approximately 6 minutes. Stir in seasoning and red pepper flakes. Stir until fragrant.
  2. Pour in the entire can of tomatoes with their juices, and add the water. Bring to a boil, and add the rice.
  3. Cover and turn down the heat to low.
  4. Rinse and drain 1 can of beans, then mash it in handfuls as you add it to the pot. The beans can still be chunky. Rinse and drain the second can of beans, and simply add them to the pot without mashing. Stir.
  5. Allow this mixture to simmer approximately 45 minutes while covered, or until rice has finished cooking. Stir occasionally.
  6. Top with hot sauce if desired.

Perfect for a chilly February night! Sausage would have been great in this, but I was going for a lower-fat Tuesday. A warm, crusty French baguette would also make for a nice lagniappe. This would normally make 4 servings, but Kevin was pretty hungry on Sunday, thus leaving leftovers for only one of us last night.

Sesamoid Smeshamoid

I’ve hurt myself… again.  I know, total fail, right?  I wanted to run another half mary in the spring, so for now, I just wanted to make running 3 times per week feel comfortable.  Around 10 miles per week would be perfect.

Everything was going well until I ran 4 miles a couple weeks ago on an all-gravel and somewhat hilly trail.  The area between my big toe and ball of foot was hurting, but it wasn’t bad.  I ran through it.

My foot felt better on my 3-mile Tuesday run, but on Wednesday, I couldn’t even walk.  I walked 8 minutes on the treadmill (of my attempted 45 minutes), but the pain was too much.  I ran Thursday again anyway since it felt better, (another “Doh!”) though I did skip the weekend’s “long” run.

Friday’s Cardio on the Stationary Bike

This week, I had another successful 3 miles Tuesday, but the pain was back again Wednesday.  Perhaps I shouldn’t have done that elliptical circuit…  Anyway, long story short, I neeeeeeeed to take time off if I’m going to get better.  No running.  No power walking (for a few days), and no crazy elliptical work either.  Just lifting, biking, and pilates.

I think it’s just sesamoiditis (bruising/inflammation of sasamoids), which is explained well in the links below.  Basic RICE should fix it (rest, ice, compression, elevation.)

So what else am I doing instead of running?  Drowning my sorrows in beer n’ pizza, of course.  I know – emotional eating isn’t the answer, but man did it taste goooooood!

Now I think I better clean up the diet for a while.  And by “for a while,” I mean until Thanksgiving.  (Priorities.)

Rants n’ Raves

When someone asks you if you want the bad news first or the good news, which do you choose? I always want to hear the good news last so that I can end on a high note. I don’t have many gripes today, but I have 1 worth mentioning. No worries ~ I also have 3 raves (glow sticks not included).

RANT

1. Last weekend in TJs, a lady stopped to tell me how awesome a dessert product was. A stranger then made an inappropriate comment as she walked away from me. He smiled and jokingly said she can eat whatever she wants and not worry about gaining weight. Ummm… hello, mister, but where do you get off talking about a woman’s weight? She wasn’t even talking to that sleaze-ball.

Clearly, I was infuriated, and I wonder if she was too. Don’t assume she doesn’t work her butt off for that butt. No matter her size, she probably doesn’t want some creepy jort-wearing man checking out her body in the grocery store!

Whew – I need to calm down a bit – blood pressure just spiked, and I probably have a vein on my forehead.

RAVE

1. Uncle Ben’s fast-cook wild rice is breathtaking. Yes, it’s that good. After making some Wednesday night, Kev and I couldn’t quit gushing about it. I don’t even care about its ultra-processed ingredients (okay okay… I kinda care); I’m going to buy it again anyway!

2. I also want to rave about the pool. I usually avoid swimming since the chlorine dries and fades my hair on impact, but since I’m getting my hair done this weekend anyway, I decided to hit the pool yesterday morning. It felt great to exercise without stressing my joints and sensitive muscles. I also did pilates and planks at home before hitting the pool. My core was happy.

3. I finally finished Unbroken this week. Wow – what an powerful book. If you want to be thankful for what you’ve got, read this! Warning: It’s very graphic and contains details about war that might give you nightmares. It’s disturbing, but it pulls you in. Don’t say I didn’t warn you!

Tuscan Tomato Rice Bowl

It has been a loooong time since I’ve shared a recipe, or at least it feels that way.  When Trader Joe’s didn’t have what I needed to make a lentil curry dish for lunch this week, I was forced to go against the list.

Regular readers probably know that I’m a stickler to my store list.  My handy-dandy list limits impulse buys, ensures I remember (most) things, and keeps me from wandering around like a lost and very confused child.  Yes, the list is a must, so you can imagine how devastating it can be when my little TJ’s is missing 3 of the 5 ingredients I need for a recipe.

I improvised.  TJ’s – 1, Tiff – 0.  But my improvisations helped me make something awesome.  TJ’s – 1, Tiff – 1.  It’s a tie; I’ll leave it at that.

Tuscan Tomato Rice Bowl

Ingredients

  • 5 servings of brown rice
  • 3 cups low-sodium veggie broth (best if it’s got a fair amount of tomato in it)
  • 1 tsp olive oil
  • 1 small onion, diced
  • small handful of grape or cherry tomatoes, chunked/diced/whatev
  • 1/2 cup fresh, thinly sliced basil
  • 1 bag fresh spinach (looking back, I think I’d buy a frozen box of it next time)
  • 1 can chickpeas, rinsed and drained
  • 3 oz sliced, sun dried tomatoes NOT in oil (I used 5/6 the full 3 oz.  I ate 1/6 in a sandwich.  Recommended!)

Directions

  1. Cook rice according to package directions in broth.  Meanwhile, prepare other ingredients.
  2. Heat oil in pan.  Add onion and saute until soft.
  3. When rice as 10 minutes remaining, gradually fold or stir in spinach.  It will wilt and cook down significantly.
  4. To onions, add fresh tomatoes and basil.  Cook and stir 3 minutes or so, then remove from heat.
  5. When rice is done cooking and needs to rest, stir in any remaining spinach, chickpeas, and sun dried tomatoes.  Then stir in the onion, basil, and tomato mixture.  Let all ingredients cool slightly.  Serve into 5 containers for a week of awesome lunches.

This comes to approximately 310 calories per serving if you divide it into 5 servings.  It really depends on which ingredients you choose, but that’s about what mine equaled.

Note 1: I would have loved to have added a little more fresh spinach and some toasted pine nuts.  However, I cook on a budget.  I also cook simple meals.  I think you all will appreciate both aspects.  If not, go buy yourself some pine nuts.  I bet they’re lovely.

Note 2: I would have also loved to add feta cheese.  That’s no surprise.  I’m also keeping an eye on calories, and I think many of you will appreciate that as well.  If not, go buy yourself some feta.  I bet it’s lovely.

By the way… I named this “Tuscan” because of this funny “news” article from The Onion:

This dish would actually be much more “Tuscan” if it included white beans and orzo instead of chickpeas and rice.  Close enough though, right?

What I Ate Wednesday (And Most Every Other Day)

We’ll get to my meals in a wee bit. First I’d like to share a thing or two about yesterday’s workout. I woke up tired, very sore, and super hungry. It’s a good thing I wasn’t also freezing cold; that’d be too cliché.

Snuggle Monster wants more zzzzs.... and snuggles

After I finally quit snuggling with my kitty, I had a peeb-covered rice cake. It was the perfect pre-workout hunger fix. I couldn’t do much for the soreness, but I completed 35 sweaty minutes on the elliptical before finishing up with about 20-25 minutes of abdominal work.

I was mainly sore in my lats and inner thighs. This can be expected when you switch up your routines on a regular basis. Gotta keep loading the guns! Instead of hitting the gym bright and early this morning, I leisurely enjoyed breakfast and coffee with Kevin.

Don’t worry; I’m not skipping my workout today. I’m simply postponing it. I’ll attend body pump tonight, and if I have time, I’ll also do 15-20 minutes of cardio before class.

Speaking of breakfast, let’s get to the yum stuff…

Breakfast for the week has included a pre-gym rice cake, a post-workout hardboiled egg, and oats upon arrival to the office. The oats include ½ a cup oats, 1 cup cherries, and 1 or ½ tsp ground flax. Can you tell I really really really like breakfast???

Like last week, I’m having a daily salad for lunch. One day I might have to have a wrap or pita instead though. Too much salad makes Tiff a dull girl.

Snack consists of an apple and some almonds. I finally sprung for organic apples! Seeing as how they sit at the top of the Dirty Dozen list, it’s about time I splurged on them.  Oh, and I may have also cheated by grabbing a bagel from the break room around 2.  Willpower, 0.  Carbs, 1.

Dinner this week has been a mix of goodness, and it only gets better from here. You’ve already seen the grilled veggie wrap (sooooo good) and the Greek stuffed peppers. Last night was this awesome teriyaki chicken.

Tonight I plan to have my always satisfying Chinese Take-In. This is one Kevin can manage while I’m at body pump. Yes, menu planning is very strategic in my house!
