I miss you guys! Thank you for all the kind words last week; it really meant a lot to me! I’m still not back to regular posting just yet, but here’s one of those sporadic posts I mentioned.
Recap of the Week
Friday – I made these veggie burgers (very yum). This was also my first attempt at parsnip fries. Oh man have I been missing out!
Saturday – Kev & I went to Mellow Mushroom and ordered salads. Whaaaat??? No pizza??? It sounds crazy, but MM has great salads, and it went well with the beer (Highland Brewing Co’s Little Hump Spring Ale <- not recommended)
Sunday – I made roast chicken and butternut squash for dinner, but I also cooked Kevin veggie manicotti to take for lunch. I was pretty jealous of his packable work lunches!
Monday – Beef (tortilla-less) fajitas make Mondays more manageable.
Tuesday/Wednesday – LiveFit is still going well for me, but the workouts are getting really hard. My appetite hasn’t increased, but I’m worn out all the time!
Thursday – I had my second 20-minute run of the week. Pain-free is the way to be!

Lastly, I wasn’t going to mention my hip, but I found some info worth mentioning…
I have done physical therapy twice for patellofemoral pain syndrome, which I believe is linked to my hip pain. I found this article/post that validates my suspicions, at least in my opinion. Years of knee-related, minor hip rolling just weakened my hip muscles, which made pain flare ups really bad on my long runs. Good news – it sounds fixable as long as I re-train my muscles, ice, and start back slowly.
