What I Ate Wednesday

Yay!  It’s that time again –  time for the foodie blog-hop party.  Be sure to check out Peas and Crayons to see all the links to everyone else’s WIAW posts.  (It’s worth a look; this party’s getting pretty big!)

You know how I said I was trying to take it easy on my runs?  That didn’t go so well for me.  I ran an extra half-mile repeat yesterday simply because I had a blonde moment and miscounted them mid-run.  Whoops!  It was a pretty speedy 3 miles though – well, considering there were big hills involved.

Snack: Rice Cake (before my early run)

Breakfast: berry protein oats with chia (soooooooo good)

Snack: hard boiled egg and 1/2 cup green beans

Lunch: broccoli slaw and mushrooms in 2 TJ’s low-carb, high-fiber wheat wraps – along with TJ’s guacamole hummus (I wanted to make my own tahini sauce for the wraps, but TJ’s doesn’t sell plain tahini.  I grabbed this stuff instead, and I’m impressed!)

Snack: a little chocolate and one of these babies (apple muffin recipe coming soon!)

Side Note***I worked from home in the afternoon, so Leia helped me out as best she could.

Dinner: eggplant & seitan on whole wheat pasta (I guess it was like a mix between caponata and vegan bologonese)

I really liked dinner and am happy for the leftovers tonight. Kevin, on the other hand, is not a fan of seitan.  This was my first time making it, but since it was only half a hit, I guess I won’t be posting a recipe for that. Muffins win!

  4. It depends on what the workout is. First and foremost I have to have coffee before ANY workout can be done. If it’s 3-4 miles or less, or a workout dvd, I won’t eat breakfast. If it’s more than that I’ll have a snack or just wait until about an hour or two after a decent breakfast. That way when I finish it’s close to lunch time:-)

  5. I never eat before my morning workouts. I’m one of those freaks who feels like I work out better on a completely empty stomach (I realize this is probably completely inadvisable, but what can you do). I’ve tried seitan but have never cooked it. I remember liking it, though!

  7. I have never heard of seitan. Interesting.

    I also never eat before my morning workouts. I wake up, go workout, and eat afterwards. Otherwise I wouldn’t have enough time or would have to wake up even earlier and I’m not down with that.

    I’m a big seitan fan. My seitan chorizo froze so well, and I’m all about something I can make to take to work in an emergency. love the idea of serving it with eggplant!

    Have you ever made your own seitan? i made some and marinated it with a little soy sauce. Was so delicious!

    • Nope – never made my own. Since this was my first time, I figured I should try it pre-cooked first so that I know if I got it right when testing a recipe. Haha

  14. Whether I eat or not before running in the AM depends on the distance… If it’s a short one, I don’t even drink coffee!
