In honor of Friday, I thought I’d celebrate with pints n’ pizzas. Oddly enough, it’s not what you’d think. Or is it? No – probably not.
Pint:
I haven’t had any new beers this week, but I did have a pint. It’s a pint of green smoothie! In the mix: 1/2 cup skim milk,1/2 cup fzn blueberries, 1/2 fzn banana, a handful or two of baby spinach, and 3 TBS Trader Joe’s hemp protein (97 calories worth, FYI).
It was delicious, but I just had the munchies yesterday morning. I “needed” something extra, so I followed it up with an Eat Think Smile bar.
Pizza:
On Sunday, Kevin and I made pizzas for dinner. I had him make two Flatout pizzas, and I made myself one of Janetha’s cauliflower crust pizzas. (I adapted the recipe a bit, but it was the same idea.) I would have made Kevin the cauliflower crust pizza, but I wasn’t sure he’d like it. In fact, my expectations were pretty low.
I was pleasantly surprised! It was good. Good like regular pizza? Heck no. Still tasty and satisfying. Yes!
In order to use up the remaining sauce and cheese, I think we’ll make these again this weekend. The roast eggplant on top was a great add, BTW.
Healthy pints and pizzas… you totally didn’t see that coming.

I still haven’t gotten on board with the cauliflour crust. Maybe I should just try it… but regular crust is just soooo goooood….

I have cauliflower pizza crust on my never-ending “recipes I want to try” list. Glad to hear it gets a good review, I might have to bump it up in priority!

I’m not a fan, but it’s the only hemp one I’ve tried. It’s a little gritty and not particularly flavorful.

Love this idea for a healthified pizza. I tend to healthify a lot of my dishes – usually just adding a little extra veggies to whatever I’m making

cauliflower pizza scares me a little, but your pictures make it look good. I like making mac and cheese with butternut squash. That’s my healthified dish

I still haven’t tried the cauliflower crust, though you would think that I would have already since I eat cauliflower like candy. I seriously LOVE the stuff!

Yes, I love a good night with pizza and beer. YUM-o! Homemade pizza is way tastier sometimes too. I might let you keep your cauliflower crust, haha.
I spruced up a dessert by swapping out ice cream for pudding and cookie crumbles for fruit and meringue. Twas tasty!

I don’t know if I would consider it healthified, but I recently made a mojito mocktail. It was very refreshing and it did take satisfy the taste for alcohol. It was made of: crushed ice, half water, half lime seltzer water, a splash of fresh lime and crushed mint leaves. Super refreshing!
