Revisiting the Weekend

Did everyone have a good weekend?  I sure did!  Well… I did before SNA (Sunday night anxiety) got to me.  Anyone else get that?  Needless to say, I’m not quite ready to start another week yet.  I figure I can ease into it by taking one more look at the weekend.

Friday: Kevin and I recently booked a trip to Barcelona and Prague, and to celebrate, I created a Spanish meal.  It was gazpacho, fresh bread, and Trader Joe’s Spanish cheese sampler (Cabra al Vino, Iberico, and Manchego).

Of course, we enjoyed this with Toro tempranillo outside on the porch.

Sunday: I needed something lean yet fun.  I found this recipe from Trader Joe’s website, but I made some changes (big surprise, right?).  I omitted the bacon and used 1 (heaping) TBS of Earth Balance instead.  I also used celery instead of leeks since I needed celery later in the week anyway.

Major yum.  I didn’t measure my spices, but I threw in rosemary, garlic powder, and some thyme.

Let’s celebrate that trip just a little more, shall we?

    So many amazing things to take pics of too – great tapas, cool old churches,delicious vino and friendly people to meet.

    Prague is also amazing…lots of walking there too and the castles are amazing!

    My weekend was fun but went by too quick!

  5. Ahh I love Barcelona!! Although I have to admit, every single time I have been there I have either been working and/or ridiculously drunk so I can’t remember any of the cute little restaurants / places I visited! I seriously have the memory of a goldfish! :/ You will have an awesome time though, fo sho!! :)

  7. Barcelona is amazing! My fiancé and I went there On our first vacation together! Go to the normal sights like sacred familia and Los rambles but also try to rent bikes and bike through Olympic park – we did it with just a map so much fun! Also if u have a full day to spare take public transit to Montserrat and hike up the mountain. It’s an old monastery literally built into the side of the mtns. H e fun I’m jealous!

  8. Sounds like an amazing trip – can I hide in your suitcase?! :) Prague is gorgeous, you’re going to love it. Bring a huge SD card for your camera, you’re going to be taking a lot of pictures. The St Charles Bridge, the castle (largest in Europe), and just the streets are incredible. I want to go back now!

  9. I totally get “SNA” too! It’s the worst — both my husband and I are no fun to be around once it hits about 3p each Sunday before a work week. We’re trying to combat it by getting froyo at that time..ha!

    My weekend consisted of studying and writing an exam… but I went out for sushi after, so that made it better! ;)

  12. I live in Barcelona, so I can share some MUST list.
    I recommend to see: Sagrada Familia, Gaudi park, Picasso museum, La Ramblas (the craziest street ever), different Tapas restaurants, Citadella park, walk around in Placa Catalunya, Placa Espana, Passeig de Gracia.
