February is nearly upon us. Pink & red adorn our calendars. Hearts decorate the stores, and love is definitely in the air. Right now, I’m feeling the love, but I’ve really been feeling it toward our furry (and feathered/scaled/naked) companions.
It’s no secret that I love animals. The problem is, I love them out roaming forests of the wild, but I also love them on the grill. I know, I know… please don’t hate me.
In an effort to show animals some love, I’m going vegetarian for February. I will also try and limit my consumption of other animal products, but I’m mainly focusing on meat. I did this last February (before I began blogging), and it went so well that I have decided to do it again.
I’m not doing this for weight loss. (Though if a few pounds decided to fall off, it wouldn’t break my heart…) In fact, it will probably be even harder for me to not “carb-out.” It’s still going to require the same willpower to keep myself on-track.
Kevin said he’d participate as well, but if he’s out with the guys or at a work function, steak is definitely still on his menu. Isn’t he awesome? This gives me the freedom to cook as much quinoa, lentils, beans, and veggies as my little heart desires.

Other news from yesterday, I hit the pool after some pilates in the morning. My joints would prefer that I swim more often. Today’s workout will be a 30-minute run and the full body routine I outlined last week.

Aww yay! I would never hate anyone for eating meat!

I’m impressed that the hubby is joining! I made veggie chili last weekend and my boyfriend asked if I had any extra ground beef he could mix in lol.

Good luck with that! I think it’s so much easier when I’m doing it without thinking about it than when I’m consciously trying to cut meat out of the diet (sometimes I realize I haven’t had it for 4 or 5 days in a row…). But I believe you can do it!

Good luck with your month of vegetarianism. My “go to” meals when I first gave up meat were actually Mexican inspired creations because rice and beans are complimentary protein sources!

We had spaghetti squash lasagna for dinner last night, and I can’t wait to have the leftovers for lunch today! My husband and I tried to do some vegetarianism for a while last year. But his idea of a vegetarian diet was french fries and mozzarella sticks, so it didn’t work out very well.

How does the spaghetti squash taste compared to regular spaghetti? I’d like to make it but pretty sure my fiancé would be like ‘where’s the pasta??” in his silly Irish accent lol

You can do it, I don’t think I could, maybe one day I will try, I did do it for one day, not sure if I can last an entire month.

Love that you are so open to trying new things! Ha! I was sooo opposite, I went vegan and put on weight due to high grains and starchy foods and my skin hates me. I stop and add in animal products and I drop weight, cut grains, and skin clears!

Wha a great way to show love fr animals!
In February I plan to show myself some love by eating well and relaxing more.
I also plan to make it a point to thank my BF more. I definitely think he is more appreciated then he knows and I can easily change that!!

That’s a fantastic idea! Hmm…I’m loving that Carnival is coming up in feb and it’s going to be SO much fun! Lots of dancing and music and costumes and feathers and parties…. SO crazy…I can’t wait!

So far I am loving that I’ve been getting to sleep earlier. I get super stressed out when I don’t get enough sleep so making the effort is really paying off!

Right now I’m loving the weather on the east coast…it was 58 degrees and it’s supposed to be warm the rest of the week! Sunshine makes me happy! Impressed that you can give meat up for that long and more power to you. I’m interested to follow your progress. Those meatballs look fantastic!

Yay for going meat-free! Becoming a vegetarian was the best thing I’ve ever done. I’ve tried SO many times and always went back to eating meat but something clicked in 2009 and I haven’t looked back since. I promise you it’s not nearly as hard as anyone will tell you it is

Aw! That’s so awesome that you’re going vegetarian for the month. I’ve been vegetarian for almost 9 years, and vegan for 6 months. I love it. I’m such an animal-lover, it’s hard to even fathom eating them!
I love those meatless meatballs- they’re a staple in my kitchen!
