I’m ready for veggies! I made veggie egg cups for breakfast, and I plan on having salad for lunch most days this week. I want salad! Yeah, I said it. I never say that, but sometimes you just need raw goodness.
While planning my lunch, I contemplated different salad ideas, so I thought I’d share a few of them…
- Mexisalad: lettuce, black beans, bell pepper, corn, onion, salsa, shredded queso blanco
- Asian-Salad: lettuce, shredded cabbage, carrot, snap peas, edamame, sliced almonds, ginger dressing
- Hippie Salad: lettuce, sprouts, carrots, button mushrooms, sunflower seeds, hummus or goddess dressing
- Greek: onion, cucumber, tomato, oregano, feta, oil & vinegar, kalamata olives
- TJ’s Pear: baby spinach, cashews, diced pear, TJ’s champagne pear dressing
- Waldorf: lettuce, apple, dried cherries, walnuts, vinaigrette
- Picnic: lettuce, ham, cheddar cheese, peas, carrots, black olives, dressing
That’s about it for now. It’s surely enough to get me started. Bring on the veggies!

They sound fab- I like nuts/ seeds and dried fruit on top of a salad- adds a bit of sweetness and crunch

I’m with ya on the salad for the rest of the week. How about shrimp cobb salad? Shrimp, avocado, corn, and black beans, yummmy!

Glad you’re feeling better! I think my favorite salad combo is: mixed greens, edamame, walnuts, avocado, carrots and a veggie burger! So easy but SO SO delicious!

Goat cheese, butternut squash & cranberries, give it a go on top of spinach with a balsamic dressing, you’ll love it!

I’m so ready for veggies too! Roast veggies on lettuce for lunch for me today. I didn’t eat horribly, but it was definitely different than my usual eating patterns. And peppermint icecream! That is my all-time favorite ice cream flavor (and yeah, I get weird looks when I say that while other people are naming “Chocolate” and “Cookie dough”), but I have yet to find a vegan version–it makes me sad every holiday season that I don’t get my favorite ice creamy treat. Although, I suppose I get enough other treats to make up for it

Love the mexican and pear salad!!
I cant really say that I have favorite toppings. I usually go with whatever I am craving. I do, most of the time, love avocado and shrimp on my salads – so I suppose those are my favorites?

I face planted into a kale salad for lunch and it tasted so amazing after all the sugar of the past few days! I’m always a fan of the Mexican themed salads

i loved you called it a “hippie salad” – too funny! Ive been consuming tons of veggies the past 3 days… YUM.

I’m in the same boat. I cannot get enough veggies today. That Hippie salad sounds like one I’d eat. I also like topping mine with sauteed veggies like brussels or asparagus. Fruit is always a good addition too – lately I’ve been dumping pomegranate seeds and blueberries on salads (craving anti-oxidants – lol!).

on salads I love: carrots, broccoli slaw, cukes, and parmesan cheese!
p.s. that peppermint ice cream is SO GOOD.
