Kevin and I sort of had a little date night last night, so I’m going to keep this post short n’ sweet. There’s no time for post-prepping when there are snuggles to be had!
I started off the day with a workout. A good sweat is the best way to start a Monday… well, unless you’re on vacation or something. I did my Power Pyramid Treadmill Workout again, and I liked it just as much as last time.
Don’t mind the semi-creepy lighting…
Lunch was simple, yet it was also simply delicious! Romain with pear vinaigrette, strawberries, cauliflower and some of the chicken I baked on Sunday. You’ll be seeing a repeat on WIAW for sure!
Speaking of repeats, Kevin and I loved this Cuban Picadillo recipe the last time I made it, so I whipped it up again last night. My body was craving some iron, and beef was just the ticket. Couple that iron with the vitamin C from the tomato sauce, and talk about a winner! The olives and raisins, on the other hand, those just taste good.
Have I mentioned that the hubby and I are both olive freaks? We both swiped a couple extra before throwing the others into the pot. Yum!

Good morning all! How was your Earth Day? I totally forgot it was Earth Day when I wrote my post yesterday. How green of me, eh? That doesn’t mean I didn’t celebrate.
I had a meatless Monday. Lunch = veggie burger and spinach salad. Dinner = black bean quesadilla.
Dinner was made with Sunday night’s leftovers. It was enchilada night, and it was fabulous.
I also celebrated Earth Day by cleaning with some vinegar and also doing laundry in cold water. Okay, okay… I usually do those things because I’m
cheap green like that, but let’s just say it was for Earth Day.
I also decided to forgo the treadmill for the trails. Five miles, BAM! I was surprised at the calorie burn I saw after the walk, but I was even more surprised at the things I saw during the walk, four ducklings, squirrels, turtles, a muskrat, tadpoles, and four turtles. (biology nerd over here)
- Did you celebrate Earth Day?
- Are you into meatless Mondays?

Helloooo! I’ve got a quick post for you today. Given the hand situation, typing isn’t really my friend at the moment. So here it goes!
Yesterday’s treadmill workout:
Be sure to end with a cool down and stretches. While walking, pump your arms, use good posture, squeeze that tush, and stand up straight to engage your abs. Don’t hold onto the handles! Of course, I bet y’all know that already…
So yummy! It was sliced pork tenderloin, soy sauce, terriyaki, snap peas, baby corn, carrots, and bell pepper served over my favorite rice. Sorry I have no recipe, but it was approximately a pound of pork, 1 TBS olive oil, 2 TBS low sodium soy sauce, and 2 TBS low sodium terriyaki.
Have good one!
- Do you ever do walking treadmill workouts, or do you stick to running or other machines?

Life’s about balance, right? Well I guess that’s what you can call it. Let me just start with my workouts as of late. I’m happy to report that they’re going much better than last week.
The eats have been good too!
Monday was a back and biceps day with a 3-mile run. I actually worked out after work instead of in the morning, which was a lovely change.
Tuesday was just a walk with Kevin before work. I considered doing more, but this just felt right.
I finished up a great workouts yesterday. I blame it on the “skank shorts.” I sort of followed Julie’s 55-minute incline walking/running workout, but I only did half the incline with all the same speeds. Yup – you read that correctly. I still got a decent workout from half the incline. I followed up with goblet squats, plie squats, and my favorite version of bridge lifts.
skank shorts for the win
Today I plan to run 3 miles (or elliptical with intervals) and save a little time with a core and shoulder circuit.
Last Friday, I did a chest and triceps workout before swimming and walking in the pool. Want tired arms? Do your chest/tri workout then tire yourself with breast stroke. Yowza! I plan to do the same workout this Friday. There’s nothing quite as refreshing as an early swim.
Hopefully I’ll squeeze in another walk with the hubs on Saturday.
Speaking of squeezing…
Squeeze into mah bellay!
I didn’t quite finish all of it, but man was it good! I don’t know what happened, but a pizza craving hit my like a brick. I told Kevin we could eat a healthy meal at home Friday and/or Saturday to make up for it, but he needed to take me out. So worth it! Like I said, balance, right???
- Had any cravings lately you just haaaaad to give into?
- How have your workouts been?

Today’s post is a quickie, but there were just a few really small but really good things worth sharing. And by “a few,” I actually mean five.
1. Yesterday’s workout started with a cold, early walk with the hubby. He even carried the flashlight. What a gentleman.
2. Despite the hat hair from my bundled walk, my hair turned out pretty well. Not bad for not even washing it, eh? Good hair days make everything better.
3. I made it out of the health food store for under $30! Woohoo! Lots of natural a/o organic goodies, and I even picked up turkey meatballs for Kev (half a pound free)! Okay… the ice cream wasn’t free, or even on sale, but who can pass up mint chocolate chip???
4. The grocery stop lead to this awesome dinner. Well, Kevin’s was awesome. Mine was just good, but hey – still better than bad!
5. Lastly, Game of Thrones: Season Two finally arrived yesterday. Thanks Netflix! I watched the entire disk last night… oh wait, the jerks only put two episodes on a disk. Sigh… oh well, at least I have something to look forward to. Bring on disk two!
I hope you guys are having a nice Thursday. What’s been making your week special?
