What I Ate Wednesday #280182373

How many of these have I written? Goodness knows, but here’s another! Thanks Jenn for another WIAW party!

Breakfast: While my blueberry cobbler was baking (more on this later), I did this 30-minute workout, which I followed with fruity protein oats. (BTW, I found this organic frozen fruit mix this week – filled with pomegranate, strawberries, cherries, blueberries, and raspberries. Mmmmmm!)

Snack: hard boiled egg (love these things)

Lunch: Spring salad: spinach and field of greens with strawberries, edamame, radish, cucumber, and Newman’s Own light honey mustard dressing – minus the slice of bread (that was from Monday’s lunch)

Snack: My office had a derby party yesterday, which included big hats, dresses, bowties, and a dessert bake-off. I nibbled on my cobbler to make sure it was edible, but I really enjoyed not one but TWO helpings of this chocolate trifle thing. I didn’t need it, but it was so good! I think I’ll have to make my own one day… hopefully soon.

Dinner: I wasn’t feeling great, so I just stuck to a wee bit of leftover steak from Monday and some soup. (Side note: I broiled two fabulous filets Monday night. So yum!)

Yup, that about sums it up. Here’s to hoping I feel better today!

Bestowed Giveaway

Hello All!  I think this blog has been teasing me.  Last week, I said there was no bump.  Then all of a sudden, there was small but definite bumpage.  Yesterday morning, I said my energy levels were getting better, but all I wanted to do all afternoon was sleep.

Funny how that works sometimes, eh?

I did manage to muster up a bit of energy toward the end of the day so that I could squeeze in a 3-mile walk and 20 minutes of yoga.  Though I’m normally up for my morning sweat, that just wasn’t happening yesterday.

Luckily, this definitely was happening.  Warm weather is salad weather, and I was really in the mood for a cobb salad dinner.  In the mix: field of greens, cucumber, hard boiled egg, slice of uncured turkey bacon, bell pepper, shredded colby jack cheese, Newman’s Lite Honey Mustard, and some corn.

I hate to call him out like this, but at dinner, Kevin asked for more dinner salads like this over the summer.  Whaaa???  Fine by me!

That’s not the only yum I’ve been having.  I’ve also been digging into the Bestowed box, which I received on Friday.  Bestowed sends its members 5 product samples each month, and I received their May box to try and review.

I haven’t tried everything in the box just yet, but Kevin and I both loved the Way Better chips.  They have a tasty little kick to them!  I wasn’t crazy about the coconut water powder (though I do like coconut water) or the salad cookbook.  I’m still undecided about the TeeChia super seed cereal, and I’m really eager to try the Sun Cups sunflower butter cups.

Pearfect WIAW

Hello! Here’s my “pearfect” WIAW. Organic pears were on sale at the grocery store this week, so I stocked up on them. Actually, I probably should have bought more!

As always, be sure to hop over to Peas & Crayons to check out other blogger eats & treats! Below are mine for yesterday:

Pre-workout: rice cake and Trader Joe’s pb (always a winner)

Post-workout: low-fat plain yogurt, 1/2 pear, fiber cereal (I mixed it before my shower so that it’d soften up by the time I ate it. Anyone else like slightly softened cereal/granola?)

Snack: chocolate chip pumpkin bread (I finally defrosted the last of it!)

Lunch: 1/2 Trader Joe’s wheat pita, romain and spinach blend, 1/2 pear, cauliflower, chicken, and pear vinaigrette

Snack: a couple almonds and the red lentil chickpea cakes I baked Sunday (made w/ oats instead of breadcrumbs and a couple other modifications)

Dinner: roast broccoli and baked sweet potato (I always save the best for last!)

Dessert: the last slice of pumpkin bread and a little cereal (As you can see, I’m still out of ice cream…)

Date Night… on Monday?

Kevin and I sort of had a little date night last night, so I’m going to keep this post short n’ sweet.  There’s no time for post-prepping when there are snuggles to be had!

I started off the day with a workout.  A good sweat is the best way to start a Monday… well, unless you’re on vacation or something.  I did my Power Pyramid Treadmill Workout again, and I liked it just as much as last time.

Lunch was simple, yet it was also simply delicious!  Romain with pear vinaigrette, strawberries, cauliflower and some of the chicken I baked on Sunday.  You’ll be seeing a repeat on WIAW for sure!

Speaking of repeats, Kevin and I loved this Cuban Picadillo recipe the last time I made it, so I whipped it up again last night.  My body was craving some iron, and beef was just the ticket.  Couple that iron with the vitamin C from the tomato sauce, and talk about a winner!  The olives and raisins, on the other hand, those just taste good.

Have I mentioned that the hubby and I are both olive freaks?  We both swiped a couple extra before throwing the others into the pot.  Yum!

Veg Pledge & Rabbit Salad

Remember that wee bit of drama I mentioned yesterday? I may have been a bit over dramatic* about a little incident with my neighbors, but I’m going to briefly recap it anyway.

*See that’s the thing with ovaries. They come with a license to play up the drama, say you’re “fine” when you’re not, and change moods faster than a jackrabbit on moonshine. (I also have a license for silly expressions; I’m Southern.)

I left for my meeting in the morning, and I noticed my neighbors had a squirrel in a trap on their front lawn. This upset me, but I decided to let it go. When I returned around 3:30 p.m., the terrified squirrel was still in the cage with no food or water.

Maybe it hit me hard because Cleo looks part-squirrel.

I couldn’t let it go this time, so I ran inside and called animal care and control. They offered to have someone come set it free, but I wimped out. That would definitely create tension and wouldn’t stop my neighbors from just setting it out again the next day.

After calling Kevin for support, I put on my big girl panties and marched my butt over there… but they weren’t home. I called to alert them of the squirrel in the trap and offered to let them release it in my yard. They said they’d drive it a few miles away instead.

Did my big-girl actions make a difference? No. Am I still a bit upset about it? Perhaps.

I realize how ridiculous it is for me to get upset about one squirrel when there are tons of poorly treated animals all over the country, especially in factory farms. So I am taking a 28-day veg pledge. (This instance is not the only reason, but it’s the straw that broke the camel’s back.)

Feel free to join my vegetarian pledge, and don’t worry – it ends before Thanksgiving! And on that bombshell, I bring you rabbit salad. (I think squirrel salad would just be trail mix, so just work with me here.)

Rabbit Salad

  • 1 cup greens
  • 1 cup shredded cabbage
  • 1 peeled, diced carrot
  • 2 radishes
  • 1 TBS sunflower seeds
  • 2 TBS dressing of choice (seriously loving honey mustard, but goddess would also be fantastic)

Yeah, that’s the same salad I had yesterday, but it deserves extra attention because it’s really working for me right now.
