What I Splurged On Wednesday

by Tiff

Hiiiyaaaa!  It’s time for another WIAW, so be sure to hop over to Peas & Crayons to check out other blogger eats n’ treats too.

As you’ll notice, yesterday was a bit indulgent, at least for a Tuesday.  Sigh.  That’s okay.  I’ll just focus on keeping the weekend extra veggie-ful and let it go.  At least my pants still fit.  As you can see from the picture below, I’m pretty excited about that.

pants

Pre-Workout: rice cake and prenatal vitamin

Post-Workout: low-fat plain yogurt, strawberries, 1/2 cup oats, and a little chia (mixed post-workout and eating post-shower to soften)

parfait   berries

Lunch: I had a gift card for a local deli that was about to expire, so insert veggie burger n’ fries here.  It was good but not great.  The veggie burger was the kind with rice in it, which isn’t my favorite.

Snack: About that gift card… I had a little left on the gift card, so I threw on a muffin.  The intent was to freeze it for after my sugar detox challenge, but… umm… it just looked so darn good!

muffin

Dinner: not very hungry from that big snack, so just a bit of cilantro lime marinated tofu cooked with black beans, onion, and zucchini

Dessert: Skipped it!  At least I didn’t go toooooo crazy today, though I was wishing I still had half that muffin!

  • Do you ever splurge mid-week, or do you save it for the weekend?
  • What do you like or not like about veggie burgers?

Pearfect WIAW

by Tiff

Hello! Here’s my “pearfect” WIAW. Organic pears were on sale at the grocery store this week, so I stocked up on them. Actually, I probably should have bought more!

As always, be sure to hop over to Peas & Crayons to check out other blogger eats & treats! Below are mine for yesterday:

Pre-workout: rice cake and Trader Joe’s pb (always a winner)

Post-workout: low-fat plain yogurt, 1/2 pear, fiber cereal (I mixed it before my shower so that it’d soften up by the time I ate it. Anyone else like slightly softened cereal/granola?)

parfait pear

Snack: chocolate chip pumpkin bread (I finally defrosted the last of it!)

pumpkin

Lunch: 1/2 Trader Joe’s wheat pita, romain and spinach blend, 1/2 pear, cauliflower, chicken, and pear vinaigrette

salad

Snack: a couple almonds and the red lentil chickpea cakes I baked Sunday (made w/ oats instead of breadcrumbs and a couple other modifications)

chickpea

Dinner: roast broccoli and baked sweet potato (I always save the best for last!)

dindin potato

Dessert: the last slice of pumpkin bread and a little cereal (As you can see, I’m still out of ice cream…)

  • Had any awesome meals lately?
  • Do you like softened foods that are typically crunchy? (I like flimsy, gooey nachos, moist cereal, soft granola… yeah… maybe I’m odd.)

Spiced WIAW

by Tiff

Happy WIAW!  I had a happy Tuesday.  Not only was it filled with extra kitty snuggles and yummy food, I also had new leg press PR.  Woohoo!  I’m already sore today, and I’m sure it’s only going to get worse.  That’s okay though; each agonizing step just reminds me of how hard I worked.

Thanks Jen for hosting another WIAW linkup party.  I guess it’s time for me to dive right into the eats!

Pre-Gym: rice cake with rocket fuel (aka: peanut butter)

Post- Gym: parfait with organic TJs cereal, organic TJs Greek yogurt, and a beautiful Harry & David plum

parfait     plums

Snack: a small handful of raw almonds

Lunch: 3 oz chicken breast cooked in olive oil with cauliflower, peas, curry, and a shake of ginger (prepped Monday)

 curry     curry

Snack: pumpkin protein bars (with oat flour and walnuts – prepped Sunday)

pumpkin

Snack (again): my hungry self snagged a handful or two of Kev’s chips when I got home

Dinner: turkey chili (I ate more than I meant to, but it was worth it!  Side note, I recommend the recipe, but I had to add hot sauce to mine.  It’s tasty but weak.)

chili

Between the curry lunch, chili dinner, and pumpkin spiced snack, that’s a lotta’ spices!  K, enough procrastinating… I’m off for my walk and some light yoga.

  • How do you like your chili?  Extra spicy?  With cheese?

WIAW: Parfaits, Pumpkin, & Potatoes

by Tiff

Thanks for checking out my What I Ate Wednesday post.  Did you know this is the last WIAW before Christmas?  Squeeeeeee!  If you haven’t already, check out Peas & Crayons for other WIAW posts.

Breakfast: 1st Breakfast, a lil’ pb on a rice cake, 2nd Breakfast: Greek yogurt parfait with blackberries

breakfast     parfait

Lunch: Leftovers of Monday night’s dinner (it was worth repeating) with a slice of bread

pasta

Snack: Two packages arrived today.  I got a new vacuum, which is good except that now I actually have to use it, and I got a Christmas delivery of Harry & David pears.  So pretty!  I ate one with a handful of chips.  (whoops)

vacuum     pears

Dinner & Dessert: jerk turkey burgers, sweet potato “fries” and green beans, followed by a pumpkin muffin

dinner     muffin

Side Note: I had a good 3-mile run and a ballin’ leg session yesterday at the gym.  I also went for a 1-mile walk after work for fun.
Extra Side Note: The “first breakfast” and “second breakfast” labels mean a little more to me now that I’m reading The Hobbit.  Elevensies?
  • Got plans to read/watch The Hobbit?  Already seen/read it?
  • Getting excited for Christmas?  Honestly, it’s too warm here to feel like Christmas, but I’m excited to see my family soon.

WIAW: Wasa Wasa Wasa

by Tiff

Yesterday started off with a trip to the gym.  Well, it actually started off with an un-photographed Wasa Light Rye cracker.

Then it continued with that trip to the gym and 30 minutes of stationary biking.  The intervals included 2 minutes of tricky and one minute of hard.  All intervals kept me out of my comfort zone, but tricky zone allowed me to recover a bit.

Once I got to work, I shoveled in a strawberry parfait. (organic low-fat plain yogurt, berries, TJ’s fiber cereal)

I then had a hardboiled egg and a much needed café au lait for morning snack.  (sorry no egg pic)

For lunch all week, I’m having this omega-full salad (tuna, broccoli, snap peas, cabbage, and romaine).  I have to admit – I don’t actually like it.  The problem is my dressing: Annie’s Shitake Sesame.  Ewww – not a fan.  I may have also snuck in another Wasa cracker…

Afternoon snack is an EAS low-carb protein shake, a small green apple, and lots of water.  (Yup, I’m finally on my last box of these shakes.  Thanks EAS for all the goodies!)

Dinner was pretty fabulous, and cooking it was very relaxing.  Cooking one-pot meals with lots of aromatic spices is therapeutic for me, and this fit the bill.  It’s chana masala over rice.

For dessert, I ate a chocolate almond butter Kashi cookie.  Buy these.  They’re delish!

Those are my eats for this week’s What I Ate Wednesday (WIAW).  Be sure to check out Peas & Crayons for other great eats, recipes, and meal ideas!
