Truth

by Tiff

Don’t worry.  I don’t have any earth-shattering news over here, no life-changing confessions.  Just wanted to share some truthiness.

“Truthiness is what you want the facts to be, as opposed to what the facts are. What feels like the right answer, as opposed to what reality will support.” According to Stephen Colbert and Urban Dictionary

1. I started a new routine this week, and Tuesday was leg day.  OMG.  My legs have never been this sore, at least my quads haven’t.  Stairs, toilet seats, and basically everything was against me the following two days.

2. I’m feeling crappy again.  Yup – fever, chills, and coughs kept me up last night.  No fun.  I guess it’s a relapse since I was sick only two weeks ago and have had the sniffles ever since.  I guess I need to cool it on the workouts for a while.  Perhaps I did too much too soon after I was sick?  I attended a spin class this week, but I won’t be doing it next week!

3. Yesterday was national peanut butter day.  Believe it or not, my house is lacking in the pb dept.  Whaaaa?  The only nut butter is leftover Nutella from those Oreo cheesecake bars, but I put it on my last piece of banana bread anyway.  Close enough, eh?

5. My blood work came back from the doc.  It’s not very good.  High cholesterol runs in my family, so despite my exercise and plant-eating ways, it’s still pretty high.  You can expect to hear a wee bit more on this next week.

6. My last truth.  I don’t love cooking.  Sure, I think it’s okay most of the time.  However, cooking with wine is a hobby.  No… I don’t mean putting it in the food.

Whew – so much to share, so little time.  Ha.  Got any truths for me?

WIAW: Holiday Treats

by Tiff

A ‘What I Ate Wednesday’ post seems like a great way to recap some of my holiday fun.  I wasn’t good about taking pictures of the family this year, but at least I got a few of the food, right?  #foodbloggerproblems

I didn’t get a photo of each meal (especially lunch), but here are some of the highlights…

As you can see, my looooong weekend included lots of sweets, a bit of wine, and even some exercise sprinkled into the mix.  I had a great time with the folks, but as usual, I’m happy to get back to my normal routine.  Except the work part….

Weekend Review

by Tiff

This Monday’s pretty marvelous, which is why I’m linking up with Healthy Diva Eats for her weekly Marvelous In My Monday post.  Here’s some of why I’m in a good mood…

#MIMM

Due to all the snow in the Midwest, my parents’ flight was cancelled.  No fear, they decided to drive to NC instead.  By the time they arrived we all needed a couple of these.**Side Note: I had two beers Friday, and both were great.  I tried Highland’s Thunderstruck Porter (pictured) and Bell’s Porter.

porter

Saturday morning consisted of a nice (but cold) 5-mile run and pumpkin protein pancakes.

as well as plenty of fun for both silly kitties and silly dadies.  (I took the fam to Triple City Brewing.)

I made the Nutella cheesecake with Oreo crust again, but we also had some of Kristin’s (Stuft Mama’s) cookies.  Yum!

We wrapped up Sunday with The Hobbit in 3D (hints Kevin’s hipster-but-not glasses) and dinner at Flemming’s Steakhouse.

Today will be church, ham, and more dessert.  Merry Christmas, Y’all!

PB Crave

by Tiff

Here’s a mini post about nut butter.  I felt like sharing that I have five jars of nut butter in my home right now.  Three of these are currently open.

I have these two, which I purchased myself.  That’s my favorite peanut butter (Trader Joe’s natural crunchy salted) and the leftover Nutella from the Nutella cheesecake bars.

She was in the good light.

Then there are three others.  I won CJ’s PB Crave giveaway.  Thanks to PB Crave and to CJ!

As I said, I have three open jars at home, meaning I’ve only had a chance to try one of these so far.  I tried razzle dazzle, and it was good with strawberries.  It is a bit too sweet for me, so I think I’ll stick to my regular pb in the future.  However, I was stoked to try this stuff; I’ve heard so much about it.

I am extra excited to try the Cookie Nookie flavor, but not because of cookies.  I actually just giggle at the name.  I blame Limp Bizkit for this.

Don’t tell me you don’t remember them.  You do.  You might even be singing that song in your head right now if you’re anything like me.

Un-Vegan, Full-Fat, Full-Sugar Goodness

by Tiff

Regular readers know, I like to healthify things.  I like to healthify things a lot.  It’s a good habit/hobby to have.  However, not everything needs to be healthified.

oreo

Nutella is one of them.  Oh… and Oreos.  And cheesecake.  Better yet – Nutella cheesecake with Oreo crust

Kevin’s birthday is Thursday, but since I had Friday off from work, I decided to make him a birthday non-cake.  He doesn’t really like sweets, but he occasionally enjoys a good cheesecake.  He also approves of Nutella ever since I made him try it in Italy.  When I saw this recipe, it was really a no-brainer.

So why the full-fat, white sugar, and everything else?  Magic.  Sometimes you’ve just got to let go, quit worrying, and let the chocolate do it’s magic.  Y’all knew chocolate was magical, right?

Kevin is always supportive of my recipe flops, tofu dinners, and whatever else I put on the table. He deserved his own special birthday cake… minus the cake.

Here’s my history with Oreos.  The last time I bought a pack, I ate an entire sleeve (1/3 of pack) in the car on my way home from the grocery store.  That happened in high school, but I have been terrified of buying Oreos ever since.

I was also worried I’d over-eat these bars.  But you know what?  I didn’t.  Instead of gorging myself on 5 in a sitting, I enjoyed 1 a day without feeling deprived or guilty.  I made something rich – something good (really good), and I allowed myself to enjoy it.  This was a great feeling.

I even allowed myself a special Oreo before putting away the package.  Soooooo worth every calorie!
