MIMM #2

Hello!  I’m here linking up with Katie for my second Marvelous in My Monday (MIMM) post.

 

I made myself apple cinnamon pancakes this morning, am enjoying leftover homemade whipped cream in my coffee, and am postponing my workout until this afternoon.  So far, Monday is pretty marvelous!

My parents visited this weekend, so it was a pretty busy one.  I treated us all to cheeseburger casserole at home (not as decadent as it sounds but still cheesy) before we visited one of my favorite bars on Friday.

Saturday was spent touring the city.  I wanted to take us all out to Good Food on Montford for dinner, but there was a 2.5-hr wait.  Hmmm… my belly ain’t down with that.  We hit up Brazwell’s instead.

On Sunday, the fam left and I ate pie. No really.  I ate a lot of pie this weekend.  I made the strawberry pie and the homemade whipped cream for my guests (and because I wanted it) on Friday, but I was the only one who ate any.  Fine by me!

At least mom got to enjoy some apple pancakes on Sunday before she left.  Yup… just finishing up the leftover batter this morning.  Mmmmmm!

Holiday Fun

I know I don’t usually post on Sunday, but I wanted to share some weekend highlights.  Monday will be back to the daily grind, better portion control, and regularly scheduled posts.

Kevin and I hosted again this year.  It was a small crowd of my and his parents, mine staying for the entire weekend.

Even though I wasn’t feeding an army, I got a huge turkey anyway… along with extra wine.  It’s best to be prepared.

I didn’t burn anything, and no one experienced travel issues.  I guess that means it was a success.  Extra leftovers were an added bonus.

I’ll share links to the winning recipes once I can locate all of them again.  (Yes, I realize this is the actual point of Pinterest.  Perhaps I should use it productively instead of just clicking around for funny cat pictures.)

We wrapped up the weekend with Black Friday shopping and football.  ‘Twas fun.

Friday Five

After a frustrating week, it’s finally Friday, and I couldn’t be happier. I’ve got a date with the hubs tonight, complete with a trip to the hardware store (so romantic). Then I’ve got a date with a new orbital sander all day tomorrow while he’s in class (hints the trip to the hardware store). 

Really though – I have good things to share other than news of power tools.

1. Happy Early Birthday to Grandpa! He’s active in his church, his inter-faith group, his busy entertaining schedule, and his walking.  His goal for the year is 1,098 miles (3 mi/day), and so far he’s logged 946 of them, which is 154 ahead of schedule.  Way to go Gramps!

2. Girls night on Saturday!  We’re watching football, drinking beer, and eating cookie dough dip at my place.  Touchdown!

3. This dinner.  Kevin has a habit of buying “value foods,” such as a large bag of potatoes when he only needed one for a recipe.  This leaves the creative one to come up with meals for the rest of the potatoes.

I must say – the creative one found culinary success.  I planned to make twice-baked potatoes, but they were too small for that.  Instead, they’ve been cubed, roasted, and covered in cheeeeeeeese.  Yup, there’s a good bit of broccoli in there too.

4. My race is tomorrow.  For the first time ever, I’m not nervous.  I guess taking it easy and doing a fun-run has its perks!

5. Ben & Jerry.  Thank you Ben & Jerry for all that you do.  That half baked froyo I mentioned Wednesday is sooooo good that I doubt it will survive the weekend.

I must say, I did better than I thought with it – never having more than half a cup a day.  I never thought I could do it, but sometimes you never know what you can do until you put your mind to it… or until you want an excuse to reward yourself with another pint.

Picture A Fun Weekend

Kevin and I packed our bags and headed west this weekend. Well, not too west, just out to the Midwest to see my parents. We had a fun weekend of good food, good beers, and great company.

I spent a bit of quality time with the fam (and their two adorable kittens) Friday night. We started the evening with pale ales and India pale ales from Boulevard Brewing Company. Both were great! I thoroughly recommend them.

Later that evening, Kevin got an IPA from 75th Street Brewing that tasted of hops and grapefruit. I had a Tallgrass Brewing Company brown ale. Both were quit tasty and went well with the fig, prosciutto, and caramelized onion pizza.

We shopped alllllll day Saturday. By the way, has anyone seen this sweet product – love it!

After a yummy BBQ dinner, we all had my mom’s awesome blackberry cobbler for dessert. It was my version of birthday cake.

Due to all these indulgences, I tried to make Sunday a little healthier. I cooked salmon for the first time, and it actually turned out pretty well. I served it atop a bed of black beans, spices, and veggies. Delish!

Kevin made the mistake of letting Leia try a mini bite of his salmon, and she quickly jumped in his lap with hopes for more. Can you see her tongue reaching for it??? What a goof!
