Comfort Weekend

How was your weekend?  Did you see family, eat candy, die eggs?  I didn’t really do too much, but that’s just what I needed.  It was a true comfort weekend, mainly in terms of rest, food, and kitty snuggles.

Thursday ended with bbq dinner with this girl.  Yes, pulled bbq pork is definitely comfort food for me!  I guess it’s a good thing I’ve had a green smoothie most every day this week!

Speaking of Friday, the boss let me leave early.  What did I do with my time?  A two-hour nap, of course!  I really really really needed some rest this weekend, and that’s just what I got!

Rather than make our usual trek to see family, Kevin and I enjoyed our first holiday to ourselves.  Though it isn’t something I’d like to do all the time, it was pretty great.  There was no schedule, and I cooked exactly what I wanted.  (His & Hers salads for lunch and whole wheat banana bread with chocolate chips)

Saturday dinner was simple but good.  It was only made better with extra kitty snuggles.

This recipe I made for Sunday brunch is pretty much my favorite meal these days.  I made it on Christmas, and I couldn’t wait to make it again with the leftover ham.  Speaking of leftover ham, I made another one of my fav comfort dishes that night.  Winning!

Call me crazy, but with all this comforting R&R, I actually feel ready for today.  Have a great week!

WIAT: Starting to get my act together…

I shared yesterday’s holiday eats for my weekly “What I Ate Wednesday” post, but here’s a little of what I ate later that day.  WIAT?

It’s fairly healthy but perfect.  Sure, I squeezed in my fruits and veggies, but there are were still some leftover treats that neeeeeded eating.  I think if I cut out sugar completely I’d start going through withdrawals or something.  Better not chance it…

Breakfast: pre-gym whole wheat bread and post-gym grapefruit and microwaved egg

Lunch: I’ll dig into salad later this week, but yesterday’s cold rain had me craving soup. (minestrone)

Snack + Dinner: Quest Nutrition Protein Bar (love these) and spicy bean masala (again, great for the gloomy day)

Dessert: the last Nutella cheesecake square.  It would have been a shame to let it go to waste.  (no photo; trust it was tasty)

It felt good getting some veggies in my belly and hitting the gym again yesterday.  I still ran and did a little boot camp while my family was in town, but I think the weights missed me.  I’ve got another run scheduled for this morning, so let’s hope it’s a good one!

The wrong side of the WIAW

Hopefully today is better, but yesterday I must have woken up on the wrong side of the bed. It was a rough one, but I can’t say it was for any particular reason.

Forgetting my work clothes at home (I usually shower at the gym), driving in pouring rain (hate driving in rain), work issues, and a few other things managed to push every one of my buttons. The worst part – I usually find comfort in food. Uh oh…

First Breakfast – pre-gym rice cake

Second Breakfast – amazing apple oats (recipe below)

Snack – eggs (I planned on only eating one, but when I noticed broken shells, I knew they’d go bad soon.)

Lunch – half a packet of Trader Joe’s madras lentils over quinoa

Snack – one egg white (I was on the right track), then a bunch of tortilla chips (nope – didn’t find comfort in that bag, and nope – didn’t take a picture either)

Dinner – white chicken chili (Seeing how I was in the mood for comfort food, I scratched my original stuffed pepper idea and went for chili instead. I very loosely followed this recipe, but it turned out very well.)

Snack – ginger snaps (I swiped two of ‘em at Bible study. Sigh… no comfort there either, though I did feel much better after chatting a bit with the girls)

I know Jen’s What I Ate Wednesday theme is about falling into good habits, and… ummm… let’s hope none of yesterday becomes a habit! Well, I guess the apple oats could become a habit. Those are darn tasty!

Protein Apple Oats:

  • 0.5 cup old fashioned oats
  • 0.5-1 tsp chia seeds
  • 0.5 cup water
  • 1 small apple (like super small), diced
  • 1 scoop vanilla protein
  • dash or two of cinnamon

Mix oats, chia, water, and apple in a bowl. Microwave for about 1 minute. Stir in protein and cinnamon very well, and microwave for 2 additional minute. If it starts to boil over, just stop the microwave. It’s done.

Remove oats from the microwave and let sit. I let them sit while I work out, but you could let them sit while you shower, get ready in the morning, or whatever. When you come back to them, they’re still slightly warm but firm and doughy. Mmmmm!

WIAW: Comfort Food Edition

Some days are fun.  Some days are smooth as molasses.  Some days are a piece of cake.  Then again… some days aren’t.  Yesterday was not one of those days.

I knew it was going to be a doozie, so I did my hip exercises instead of a hard workout in the morning.  Hey, it was still something productive that allowed me to drink my coffee.  (multitasking)  I then powered up with a hemp and raspberry spinach smoothie.

I powered up again with this “marathon mix.”  It’s high calorie, but it’s delicious and nutritious.  Win.

Lunch was a salad packed with strawberries, mushrooms, radishes, and cucumber – all topped with Annie’s Woodstock dressing.  The salad and the dressing were both great, but a different dressing might have made for a better pairing.

For snack, I planned to have an apple and a hard boiled egg, but I thought this day needed some fun, or at least a fun-size treat.  (I still had the apple too.)

I got home, ate a rice cake and sweated it out while dinner cooked.  It’s amazing how even a quick workout can change your mood.  Anyway, dinner’s ugly, but it was good.  Sweet potatoes are a total comfort food for me.  Well, sweet potatoes and fun-size treats… among other things.

I may have also went for a little organic chocolate ice cream for dessert.  It was full-fat, so super creamy, but surprisingly relatively low in calories.  After today – I deserved it!
