Date Night… on Monday?

Kevin and I sort of had a little date night last night, so I’m going to keep this post short n’ sweet.  There’s no time for post-prepping when there are snuggles to be had!

I started off the day with a workout.  A good sweat is the best way to start a Monday… well, unless you’re on vacation or something.  I did my Power Pyramid Treadmill Workout again, and I liked it just as much as last time.

Lunch was simple, yet it was also simply delicious!  Romain with pear vinaigrette, strawberries, cauliflower and some of the chicken I baked on Sunday.  You’ll be seeing a repeat on WIAW for sure!

Speaking of repeats, Kevin and I loved this Cuban Picadillo recipe the last time I made it, so I whipped it up again last night.  My body was craving some iron, and beef was just the ticket.  Couple that iron with the vitamin C from the tomato sauce, and talk about a winner!  The olives and raisins, on the other hand, those just taste good.

Have I mentioned that the hubby and I are both olive freaks?  We both swiped a couple extra before throwing the others into the pot.  Yum!

In Need of Cat Nap

Exhausted.  That’s the first word I’d pick to describe myself right now.  This picture of Cleo shows exactly how I feel.  She’s totally passed out, but she’s still got a content little grin on her face.  (What?  You know you give your pets people-like expressions too.)

I was up early Saturday with a lot on my to-do list.  Remember that barre video I linked to in Friday’s post?  I recommend you check it out if you’re into that kind of thing.

I did these two videos back-to-back on Saturday morning.  Though I wasn’t sore after, my quads were definitely feeling it!

After a couple errands, Kevin and I drove up to Raleigh to meet some friends.  They’re getting married in a few months; aren’t they cute???  All of us got to watch the Hurricanes beat the Panthers.  Go Canes!  (my first NHL game)

Sunday was the usual- cooking, cleaning, grocery shopping, and my favorite show, 60 Minutes.  I whipped up some tasty stuff though, including some awesome muffins, which I will share with you tomorrow, my lunch for the week, and this awesome dinner.  Winnner!

The Food of Vacation

Kevin and I got in from vacation last night, and I am sooooo glad I took today off from work.  The jet lag is awful!  When hotel-to-home takes 24 hours, you neeeeed a day off from your vacation.

I will share a few pics here and there in upcoming posts, but I’ll try and refrain from over-doing it.  Holding back is hard since both Prague and Barcelona were so gorgeous.  Both cities exceeded my expectations, and we had a blast!

Since I’ve been on a foodie kick lately with my posts, I’ll go ahead and highlight some of the new-to-me-foods from vacation.

First off, Prague is beer city.  More beer is consumed per capita in the Czech Republic than any other country in the world.  You mainly find pilsners and lagers.  Most restaurants only have a light and a dark beer from one main brewery, such as Budvar or Pilsner Urquell, but there are tons of brew pubs around town with their own offerings.

Beer itself obviously isn’t new to me, but I was happy to try some new brews, including a couple micros.  In the photo below, I learned that women are occasionally served beer with a frothy head like this since it has a lighter taste and mouthfeel.  (I learned that on our Taste of Prague tour.)

While in Prague, we ate lots of meat.  (Love me some goulash!)  I tried beef knuckle, beef short ribs, chlebicek (pictured below), beef tartar mixed with a raw quail egg (never thought I’d eat either of those!), escargot, and even a beer-flavored ice cream (it was awesome!).

In Barcelona, I drank cava (sparkling wine), a local San Miguel beer, and plenty of sangria.

My eats included tapas, paella, iberico ham, bikinis (grilled ham and manchego cheese sandwiches that are served at breakfast), patatas bravas, and a pretty amazing quiche lorraine.  Oh… and I had gelato.  Lots of gelato!

This was not a food-focused trip, but I clearly enjoyed and embraced it.  Now it’s time for lots of green smoothies and water!

WIAW: Not Going Green

As you all might recall, March is the What I Ate Wednesday (WIAW) “Goes Green.”  While I do still love green veggies, I have to admit – I haven’t been showing them any much love.

Snack: Small Orange & Sunwarrior Vanilla Protein in Water (Sunwarrior kindly sent me some to try.  It’s thick, but it mixes better than any other protein powder I’ve had.  The taste wasn’t bad, but it wasn’t particularly good either.)

As you may have noticed, I didn’t stick to the LiveFit eating plan.  I’ll give an update on that tomorrow.  If you’re like me and feeling just a tad bit guilty of your extra snackage yesterday, just check out Kevin’s dinner.

WIA(& D)W

Helloooo!  It’s time for another What I Ate Wednesday (WIAW), and this one includes a couple of extra drinks.  I’m eating the same thing all week, at least for breakfast, lunch, and most snacks, but this is what was on the menu yesterday.

 

First breakfast was a rice cake (I know… but surprise), but second breakfast was a whole wheat English muffin with 1.5 TBS peeb and raspberries.  Jelly is good, but I prefer the no-sugar-added goodness of fruit.

Before lunch, I snacked on 7 almonds and this sweet deal.  McDonald’s has free coffee all week.  McD’s has my fav black coffee, so this is great news for me. (Sadly, they put creamer in it yesterday, so I only drank about a third before tossing it.)

Lunch was not delicious, but it was soooo filling!  It’s a wee bit of iceburg lettuce, napa cabbage, broccoli florets, and snow peas topped with a can of tuna and 2 TBS of TJ’s Goddess dressing (best dressing ever).  This would have tasted better with 4 TBS of dressing, but I try not to go overboard.

Snack this week is awesome.  I’d eat an apple and a hardboiled egg daily if I wasn’t scared I’d get sick of it.

I tried out a new recipe for dinner last night.  I made a beef tagine.  When I saw the recipe, I knew I just had to try it.  I’m obsessed with all things “tagine” at the moment.  It was good, but I wouldn’t say great.  I *might* make it again, though Kevin said he liked it.

I may have had a beer while cooking too.  Appetizer?  The spiced ale went well with the spices of the tagine.
