What I Ate Wednesday

Hello All! I hope this hump day is treating you well so far. Have you had your coffee yet? I hear that always helps, as does the What I Ate Wednesday (WIAW) linkup party of course! ; ) Thanks for hosting Jen!

wiawBreakfast: coffee, 2 eggs, and a pear

eggiesI didn’t go too crazy with my workout yesterday, but it was good enough for E’s nap time. I completed this Tone It Up video, followed briefly with pushups and hip exercises. Mmmhmmm, welcome to the gun show.

gun showSnack: egg and half a wheat bun (egg was E’s leftover breakfast he refused to eat)

snackLunch: broccoli with this grain salad recipe (or at least my version of it, no avocado, dried dill, and wheat berries for quinoa – quite tasty!) but I followed up with a lil’ dark chocolate

lunchSnack: the other half of that bun with a bit of pb not too long after lunch (guess it wasn’t too filling) and this not-so-healthy but oh-so-delicious Greek yogurt, the cafe latte flavor is such a treat!

oikosDinner: braised chicken, asparagus, and this homemade kale pesto (but I’m cheap and used hazelnuts instead of pine nuts, still tasty!)

pestoDessert: Edy’s Slow Churned butter pecan ice creamMmmmmmm

  1. Yum!! I know the Oikos stuff has a few not so great things in it but I swear the vanilla one tastes like cake batter! haha

    I made homemade bolognese the other day, using fresh tomatoes, herbs, etc. So good!

  4. I’m cheap with pesto too, I always swap in walnuts for pine nuts!

  7. My snacks usually consist of Eleanor’s uneaten food. I’m guessing it will be about 15 years before I start getting to eat my own food again 😉

    I can’t even think of a food I’ve made that was new. Apparently I’m stuck in a rut! Maybe tonight I’ll get wild with a new salmon recipe!

  9. Homemade kale pesto sounds yummy. Ishould try making that in my vitamix. I like making different sauces to put on my proteins.

  12. Coffee flavoured yogurt?! Whaaaat? Oh the joys of being Canadian 😡 I don’t think I’ve seen that one around here, but I imagine it tastes amazing. And it’s kind of embarrassing to admit that I don’t think I’ve tried anything new lately… There’ve definitely been too many ‘cereal-for-dinner’ nights around here, but I’ve been feeling lazy!

    I never thought about not using pine nuts in pesto, maybe I should try it. It sounds like a great idea!
