How is it that I feel like today should be Friday even though I had Monday off from work? Geeeeeze. Hopefully you’re week is going a bit more smoothly. At least What I Ate Wednesday is here to keep me from mixing up my days too badly. Hooray!

Post-Gym Breakfast: raspberry protein oats (I guess the texture is more like a muffin, but that’s how I like ‘em.)
Lunch: whole wheat pasta with sauce n’ plenty of kale
Snack: honeycrisp apple (my favorite) and 10 almonds
Dinner: turkey muffins and green beans (Yup, I made these last week too, but I tweaked the recipe. Kevin and I both love these things, so he agreed to eat them again if I agreed to make them. Deal.)
Dessert: plain Greek yogurt (I definitely would have preferred something sweeter, but the house is lacking in the dessert department.)
For those of you who wanted the turkey muffin recipe last week, have no fear. I actually wrote down the measurements this time, so I’ll type that up for you tomorrow.

I feel like that’s the easiest question in the world. Cupcakes, Muffins, Meatloaf Muffins.
When sweets are in the equation, protein takes the back seat. lol.

AND, I am obsessed with the PB and rice cake combo. One of my favorites.
I spinned off your pork and beer slow cooker recipe the other day, and used chicken and a few other ingredients. Thanks for the brilliant idea!

I thought yesterday was Friday… and I really have no idea what to day is. Gah! I’m losing my wits in my old age
And muffin textured oats are my favorite way to eat them as well… it honestly skeeves me out when people eat runny oats. Ick.

I did turkey meatloaf last night & it was delish! I might try to muffins for easy, quick lunches! Happy Wednesday, although I do feel like it’s Thursday, dang!

We made meatloaf muffins for our dog’s birthday last year, huge hit. I am a total cupcake gal. Well more of a cupcake top, the icing, best part, lol.
When we make meatloaf, same as you with the turkey, we put ketchup or bbq sauce on the top. MMM.
Thank you for reminding me to pick up rice cakes.
