Eating In

The first two days on my challenge went pretty well.  Oh wait, yeah – I’m talking about that little challenge I forgot to mention.  What can I say, I’ve been busy.

Diana from The Chic Life if hosting an Eat In Month challenge for January.  She’s super lax on the rules, so you can eat in for just a week or two, give yourself cheat days, or even extend it beyond January.  Y’all know I prefer to make my own rules, so this sounded good to me.  Plus, it goes well with my Healthy on a Budget goals.

Yesterday before work, I put in three miles on the treadmill.  My body was sore yesterday from Tuesday’s sweat fest, so it was a slow jog.  I’m okay with that.  I also completed 20 minutes of core yoga after work, which helped blow off work stress.

The yoga quickie gave me plenty of time to pack up my lunch for tomorrow before getting started on dinner.  Yup… more cabbage soup.  (So much better than it sounds!)  I’ll have some berries and 1% no-salt-added cottage cheese for snack.

Dinner was awesome.  One pot meals make such wonderful leftovers, especially when they’re all hopped up on spices.  By the way, do food magazines make anyone else hungry?  I can only look through them when I’m already finishing up a meal.

I wound down with kitty lovin’ on the couch.  (Cleo’s couch face plants crack me up.)  ‘Twas a nice night.  Be sure to check back tomorrow; I might just have a lil’ somethin somethin going on for ya.

  • Do your pets sleep funny?  Snore?
  • Would you consider an eat-in challenge?

  1. I agree, one pot meals make awesome leftovers!
Yes.. my dog sleeps funny. 🙂 She moves her legs in her sleep sometimes and she sighs in her sleep as if her life as a dog is so hard. 😛

  2. Until I started dating the current boy, I pretty much ate in for every meal except maybe one during the week. I’m super thrifty when it comes to stuff like that. And I’m with ya on the one pot meals… btwn those and the slowcooker? It’s the only way I cook. 😉

  3. I love cabbage soup! Hmm…maybe I should whip some up this week! Have a fabulous Thursday girlie!!

  4. Nick and I tried an Eat In Challenge in DEcember. We were successful until the end……so many people in town wanting to go out! It was tough. We’ll do it again, maybe in March? Because, February has Valentine’s Day and January it’s out birthdays…..yeah, March sounds good!

My puppy sleeps like a human….it’s the cutest thing ever!

  6. Funny you mention pets, because last night I took 5 pictures and a video of Ryder sleeping. His mouth was slightly open with his teeth exposed and his cheek flopping down. It was hilarious. I love pets. 🙂

  7. Oh man Ella has the best sleep plant faces 🙂

  8. 5Eating in probably wouldn’t be much of a challenge for me, because I end up making 99% of my meals at home anyways… Not only does it save me some money, but I usually prefer my own cooking to whatever I can get out. That and allergies just make eating out a hassle…

I didn’t know about this challenge, but have been following it accidentally since getting back from Christmas, haha. We overspent in December and it just needed to happen. We ate at home every night last week and every day over the weekend (except dinner at his parent’s house Saturday) and are still going strong. We have a birthday party out Saturday night, but plan to still eat out much less this month than usual.

LOVE this. Since I’m staying in a lot more, I’m game. Your challenges are always keeping things interesting.

I am a sucker for all pet pics. My dog talks in his sleep. Wonder what they dream about:)

  11. My challenge should be to EAT OUT because I eat in so often, LOL! I honestly hate eating out. I always bring food with me where ever I go but I would MUCH prefer eating in the comfort of my own home! 🙂 Good luck with the challenge!!! I am rooting for you! I have a feeling you’re going to love it and come up with some awesome recipe ideas!

  12. I’m trying to eat in too – because I’m going to Junk-Free January and you can never be sure what you’ll get at a restaurant. However, I had to go out last night with the family. I did really well though! Ordered a tasty grilled trout.

  13. We already eat-in most of the time, so this wouldn’t be much of a stretch for me. It wasn’t always this way though, so I love the concept. If you like to cook, staying in can be more fun! 🙂

  14. I HAVE to pack my lunch before I relax for the night or it will never get done!

  16. Thanks for joining in on the challenge! 🙂

Cleo is so cute! Bailey (my corgi) definitely sleeps weird. Corgis do this strange thing where they sprawl out on their back and sleep all stretched out. It’s really bizarre, but very cute. I also recently posted an Instagram photo of him napping with his snout in my husband’s house slipper. Ew. Silly dogs! 😛
