Happy WIAW (What I Ate Wednesday) Y’all! Here’s a little recap of what I worked and ate yesterday.

6:30 – Breakfast: vanilla whey protein oats with chia seeds
9:30 – Snack: rice cake topped with yummus
Noon – Lunch: half sweet potato, cup of broccoli, can of tuna in water topped with a lil’ roast red pepper spread
3:00 – Snack: 3 pumpkin protein bars (There is actually a lack of protein powder. I was in a hurry on Sunday and totally forgot to add it to the mix prior to baking. Whoops! I guess they’re just healthy pumpkin bars instead.)
6:00 – Appetizer: Smuttynose Brewing’s ‘Finest Kind’ IPA <;-- such a winner!
7:30 – Dinner: roast & stuffed eggplant (Mediterranean-inspired ground beef mix inside)
8:30 – Yoga: still sticking to my nightly yoga this week

- Ever just forget to add ingredients to a recipe? I often get a little flighty when cooking in a hurry.

I’ve definitely forgotten important things in baking before. Something small like baking powder, that makes a HUGE difference. So annoying!

These days, I forget to add little things when I bake, like salt or baking powder, but I remember I forgot to add the sugar to a batch of muffins once, and yeah… they were basically inedible.

Oh how I miss drinking beer.. I feel like I sound like an alcoholic,… but oh man how I love IPAs

haha – i love beer appetizers! if i sip a beer before dinner i find that it helps tame my crazy hunger. the eggplant looks great!

Me too! I also knew dinner would take a while, so it was my relaxing “me time” in the kitchen after work.

I keep meaning to make a stuffed eggplant. I’ve never done it! This need to happen stat. So does seasonal beer drinking. Half way to cheat day!!!

The stuffed eggplant was good, but not as amazing as I’d hoped. I plan to redo this recipe in the near future.

Beer is my favorite food. ;o)
I suck at following recipes. I usually just wing it and yes, that means I often forget ingredients. Sometimes that works out ok, sometimes not.

I love smuttynose IPA! Ha, i had a beer for an appetizer tonight too…I’m glad I’m not the only one. Oh, and I found pumpkin beer for the first time at the store so I am saving that for a fall day (or tomorrow).

I’m fortunate, Smuttynose is brewed locally so I can get it anywhere – and I do! I haven’t tried the Finest Kind though!?
