Here’s my extra veggie-full What I Ate Wednesday. Be sure to check out Jen’s WIAW blog party to see great eats of other bloggers.

Breakfast: strawberry, plain Greek yogurt, and cereal parfait (the cereal is TJ’s version of Kashi GoLean)
Snack: hardboiled egg (not pictured… also not too exciting)
Lunch: whole wheat penne with kale and marinara (easiest lunch ever, and delicious!)
Snack: zucchini with kalamata olive hummus (my hopes were a bit too high for this hummus… meh)
Appetizer: light wasa cracker (come on, a girl can’t eat rice cakes every day)
Dinner: ratatouille polenta bake (always a win) and a side salad
That sums it up. I know it seems kind of light, but I had enough Monday to more than make up the difference. It happens to the best of us. I’m just glad that dinner makes enough for two nights. Now I don’t have to worry about cooking something after body pump tonight. Woohoo!

I love veggie dips, but have never tried kalamata hummus before. Sounds delicious!
Also, I’ve been really into polenta lately, so that meal sounds wonderful.

you are So right, ratatouille and polenta NEVER fails, especially when you add a bunch of fresh herbs in the tomato sauce. love it!

Just plain old hummus is my favourite veggie dip! I like stirring some chopped olives and feta into hummus for an extra kick.

Your polenta bake looks amazing! I love the combo of kale and marinara, too. Very healthy eating here!:)
