Hi everyone! I wanted to throw in a little What I Wore Wednesday into this post, but I didn’t get a picture. I tried skinny belting a cardigan with a nude belt that matched my nude pumps. though I felt cute, I also felt ridiculous. Does anyone else feel silly when they try to embrace a trend?
I’m usually up on my food trends though, so let’s get into the yum stuff.
Breakfast – 1 TBS pb before my workout, parfait after my workout (low-fat plain Stonyfield yogurt, strawberries, and Kashi GoLean Crunch cereal)
Snack – small/medium pear
Lunch – wrap (refried beans, lettuce, salsa, Rudy’s spelt wheat wrap) with organic blue corn chips – Who says eating healthy is expensive???
Snack – EAS protein with a brown rice cake
Dinner – soyaki marinated chickpea stir-fry (chickpeas, bell pepper, snap peas, bean sprouts, and red quinoa)
Dessert –I finally polished off my lemon thin cookies. I definitely exceeded calories today by a lil’ bit, but ummm… it happens.

You know what? I always forget about refried beans! I used to eat them all the time as a kid, but I somehow have forgotten about them. They are so good, and versatile!

My favorite budget meal is anything with eggs. Actually, I think I may have eggs and refried beans tonight for dinner!

For that reason, my closet is mostly full of basics I can mix and match for any occasion…

Now that’s a clean day! I eat wraps a lot of the times, and corn chips are an awesome side with a bit of fresh salsa.
Homemade tuna salads are my favorite, easy budget meal. My hus typically cheats and gets all the leftovers:)

Looks like a delicious day! Mexican food is great budget food- rice, beans, tacos or burritos, or eggs for dinner (omelets, frittatas). Yum!

I love wraps with refried beans! Mostly because I love anything Mexican-esque!
I totally agree, healthy does not have to be expensive.

I love refried beans + salsa over lettuce as an insanely cheap (but still healthy!) meal. And oatmeal. Can’t get much cheaper than oatmeal. Yeah, basically anything bean or lentil comes out to about 0.10 a serving if you get them dried, half the reason I love slow cookers so much, they make cheap so easy!

Your refried bean wrap looks awesome! Beans are the best way to eat healthy on a budget. My favourite cheap meal is chili!

Yes, I ALWAYS feel ridiculous when trying to embrace current fashion trends. I feel comfortable in workout clothes and dolled up in a dress for special occassions. Everything else feels awkward to me.
