WIAW: Meals on the Cheap

by Tiff

Hi everyone!  I wanted to throw in a little What I Wore Wednesday into this post, but I didn’t get a picture.  I tried skinny belting a cardigan with a nude belt that matched my nude pumps.  though I felt cute, I also felt ridiculous.  Does anyone else feel silly when they try to embrace a trend?

I’m usually up on my food trends though, so let’s get into the yum stuff.

Breakfast – 1 TBS pb before my workout, parfait after my workout (low-fat plain Stonyfield yogurt, strawberries, and Kashi GoLean Crunch cereal)

breakfast

Snack – small/medium pear

Lunch – wrap (refried beans, lettuce, salsa, Rudy’s spelt wheat wrap) with organic blue corn chips – Who says eating healthy is expensive???

wrap

Snack – EAS protein with a brown rice cake

snack

Dinner – soyaki marinated chickpea stir-fry (chickpeas, bell pepper, snap peas, bean sprouts, and red quinoa)

dinner

Dessert –I finally polished off my lemon thin cookies.  I definitely exceeded calories today by a lil’ bit, but ummm… it happens.

Be sure to check out other great blogger eats n’ treats at Peas & Crayons.

What’s one of your favorite budget meals?

  11. I love refried beans + salsa over lettuce as an insanely cheap (but still healthy!) meal. And oatmeal. Can’t get much cheaper than oatmeal. Yeah, basically anything bean or lentil comes out to about 0.10 a serving if you get them dried, half the reason I love slow cookers so much, they make cheap so easy!
