Happy Hump Day Y’all! It’s not Friday yet, but we’re getting there. Have faith, my friends. The regular mid-week WIAW party is underway, thanks to Jenn @ Peas and Crayons. Here’s what I ate…

I actually took this creeper pic Monday, but I’m eating the same thing all week. What, you don’t eat breakfast in your car? I take post-workout refueling very seriously.
Snack 1 – small pink lady apple and hardboiled egg
Lunch – my adapted version of Gina’s salad (Among other differences, I used less oil, more edamame, and chewy, delicious wheat berries.)
Snack 2 – hummus and bell pepper strips… along with an unplanned hardboiled egg
Dinner – field of greens salad with raw veggies, roast eggplant, roasted/salted sunflower seeds, and TJs hummus dressing (It was good, but I’m sure it didn’t compare to Kevin’s pork chop, macaroni and cheese, and green beans.)
Dessert – I’m out of chocolate!!! How did this happen?!?!? I had pb with a rice cake instead.
There have been some unexpected changes in the workout plan. I’m actually pretty upset about it (sniffle, sniffle… holding head up, fighting these watery eyes), soI guess I’ll discuss that tomorrow or Friday. My competitive, stubborn self is still trying to fight the good fight, so let’s hope my reasonable side can amp up the persuasion.
- Do you cook separate meals (for child, hubby, boyfriend, whatever)? I usually don’t, but I have a feeling I should. Kevin’s Metabolism = Nuclear Fission; My Metabolism = Christmas Coming

I don’t cook separate meals for Brian and I… I usually just give him a much bigger portion and save the others (if any left) for my lunch the next day LOL

I don’t cook separate meals but I’m sometimes tempted to because it’s hard to find healthy recipes that my mom enjoys when I cook for the two of us. But I think it’s important to sit down and eat together as a family, which is hard to do when you’re not eating the same food so I make an effort to cook things we both like. I’m moving in with my BF soon and so far he has liked everything I’ve cooked for him – even the healthy stuff – so I’m hoping he’ll be easier to please. The only change I can foresee is that I’ll have to serve him double portions of everything.

I love edamame. And am really upset the TJ’s near me (or maybe anywhere, for that matter) no longer carry the shelled frozen edamame. It’s so upseting!

Nooooo! I hope they don’t pull it from mine too.

I love your dress! super cute!
We both eat the same meals, I just eat less haha. (sometimes)

That salad looks great — edamame is one of my favorites! and I love that you eat in the car

Delicious as always! PB & Rice cake, phew – glad you found something, could have been bad.
How cute are you eating bfast! ow ow!

We both eat the same meals and I have a smaller portion. It would take way too long to make 2 meals.
May 9, 2012 at 10:24 am
Agreed. I could not do this on a regular basis!

Pink lady apples are the BEST!!! I take my post workout refueling seriously too

Delicious eats!
Thankfully my boyfriend isn’t picky at all so I don’t have to cook separate meals. And he cooks a bit of the time so I can’t complain.

Love your pink oats!! So many good and healthy eats!!

During the week, I always eat breakfast in my car after my workout. I think people who walk by think I’m crazy:)
May 9, 2012 at 7:45 pm
Ha, me too – but I’m glad I’m not alone.

I don’t cook separate meals, but we have been trying to make appropriate portion sizes. So his plate gets more than mine – same food though!

I used to always eat breakfast in my car at law school! There were only a few parking spots that weren’t two hours close to the school, which didn’t open til 730am. I’d always make my breakfast, and rush to school. I’d eat my breakfast while I was waiting
Hey now, girls have to do what girls have to do!

I hear ya! Food > Pride, haha

Usually when I live on my own cooking separate meals isn’t a concern, but when I live with my parents for the summers and breaks, it can sometime be a problem. I like to eat vegetarian a few times a week while they like to eat meat in every dinner.
Luckily it’s pretty easy for me to just bake a batch of tofu while they make a steak, and then we can all eat the same side dishes.

When we were dating, he actually told me he liked cooking. Hmmm… I haven’t seen that happen in a while! ha

I think I have eaten a pink lady apple at least once a day since they came into season here.. I have a girl from China staying with me and the other day she looked at me and said, “You have a very healthy appetite… and eat lot of apples.”

Haha, she’s so observant!

I usually don’t do separate meals for B, but sometimes I just don’t feel like eating anything real heavy, or if I feel like going vegetarian, I’ll just whip something easy up for him and make what I really want for myself.
