Thanks for all the kind words on yesterday’s race recap. I am currently still enjoying time resting up and not counting calories. Luckily, yesterday I (almost) got back into my normal eating habits. Tomorrow I plan to add in some yoga. My hips are still sore, but they’re doing better and no longer waking me up at night.
Okay… now it’s time for the yum stuff. After checking out my eats, visit Peas & Crayons for other blogger meals.

Snack: 14 raw almonds & celery sticks (not pictured)
Lunch: king non-cake ~ I made this Monday out of respect for the famous king cake. It’s quinoa with red cabbage, yellow bell pepper, and peas with green beans. The “frosting” was a homemade, light tahini sauce. There are no babies in this king non-cake.
Snack: plain Greek yogurt & a pear
Dinner: Cajun beans & rice (along with onion, bell pepper, spice, red hot chili peppers, and celery)
Snack: Rogue Dead Guy Ale with Food Should Taste Good jalapeno chips ~ I wanted a Louisiana brew to match the Fat Tuesday theme, but I didn’t have any in the fridge. I figured Dead Guy Ale would at least pay homage to that crazy voodoo past of New Orleans.
Mmmmm… beer. (Yes, I survived my alcohol-free challenge without cheating. There will be more on that tomorrow.)

Congrats on making it through the alcohol free challenge! I didn’t celebrate Fat Tuesday, and I am not giving up anything for lent although I am trying to get a handle on the recent sugar influx in my diet.

Your dinner looks so good! I love beans and rice – it’s so simple but when it’s flavoured properly it’s delicious!
I celebrated Mardi Gras by making jambalaya last night.
February 22, 2012 at 10:45 am
Jambalaya is sooooo yummy, great idea.

February 22, 2012 at 1:40 pm
I love the king non-cake, how creative is that?!
I’m a little embarrassed to say I did nothing to celebrate Fat Tuesday, I’m a NOLA native. I wish I had thought to make a king cake – next year!
February 22, 2012 at 1:59 pm
You are too creative! That king “cake” idea is genius! I love the colors of mardi gras–awesome way to incorporate them without having to turn to baked goods (not that, you know, there’s anything wrong with a baked good or two.)
February 22, 2012 at 2:54 pm
A non-king cake? I LOVE IT!
February 22, 2012 at 3:06 pm
Very creative and I love all of the photos and bright colors.
February 22, 2012 at 3:56 pm
Love your “version” of the king cake. Those colors are awesome. I actually have red cabbage in the fridge that I could do this with
February 22, 2012 at 5:23 pm
I decided it wasn’t quite recipe worthy, but I still really enjoyed it.
February 22, 2012 at 5:16 pm
Awesome non king cake! One or my roomies accidentally ate the baby one year when we hid it in her piece of cake lol how ru healing your hips? I’ve been doing hip strengthening exercises but just wonderin if h had any other tips!
February 22, 2012 at 5:22 pm
Sorry, No tips from me. Mine is joint-related due to misalignment, as per my self-diagnosis. I’m sure extra strengthening is always good though, whether it’s joint, muscle, or IT band.
February 22, 2012 at 5:29 pm
Your dinner looks delicious! I will have to try that combo sometime!
Such a cute color!
I also LOVE your nail polish by the way!

February 22, 2012 at 8:39 pm
Fabulous King Non-Cake! I didn’t do anything for Fat Tuesday – lame I know. I did give up candy for Lent. Today – I announced to my coworkers every time I wanted candy and it was frequent. I really hope I can make it through these 40 days.
February 23, 2012 at 5:09 am
I have faith in you!
February 22, 2012 at 10:58 pm
