This weekend was pretty darn good. I didn’t have too many commitments, which gave me more time in the kitchen… to Kevin’s delight, of course.
On Friday, we each had a salad and little wheat flatbread pizzas for dinner.
Why have I waited so long to do this??? (sundried tomatoes, mushroom, onion, bell pepper, cheese, sauce)
Saturday we used the leftover flatbreads on the grill, along with hummus, spinach, and grilled eggplant.
For dinner Saturday night, I made shrimp & asparagus pasta with a creamy avocado sauce. Sadly, it wasn’t yummy.
Sunday’s dinner made up for it though. I made delicious butternut squash pasta with baby spinach for the win.
I wish I always had this much time in the kitchen!

Oh we definitely had buffalo chicken soup for Slowcook Sunday- very much my favorite meal of the weekend…

I love making little flatbread pizzas…so fun. I toat ezekial pitas and load them up with goodies in the toaster oven. Hmm…best thing I made this weekend was our Thanksgiving dinner last night. SO good!

I love that you used eggplant as a pizza topping – I can’t wait to try that! Mini pizzas are the best – over the weekend I made one loaded with spinach, tomatoes, goat cheese and an egg… so random. Yet so good.

I’m not sure if this was 100% of the problem or not, but I added a bit of lemon juice, and that made it super funky.

Everything looks soo yummy! I’ve never made pizza on a flatbread but have always thought about doing it. You can also make them on pitas!

Yum! Those grilled flatbread pizzas look delicious – great idea! The best thing I ate this weekend were vegan meatballs & spaghetti squash at the blog conference I went to. I have to try to recreate those delicious “Balls” now, it’s going to be a fun challenge.

Aww, that stinks, the avocado sauce pasta sounds like it would be delish! This weekend, I think the best thing I ate was the cheese fondue at a birthday party on Saturday night. I ate and drank a lot of delicious things this weekend. February will have to be better than January in terms of staying on track!

adorable pizzas. I never make it and really should start. except for the fact that i can buy a piece the size of my face for like $2 down the straight.
