I Love Animals

February is nearly upon us.  Pink & red adorn our calendars.  Hearts decorate the stores, and love is definitely in the air.  Right now, I’m feeling the love, but I’ve really been feeling it toward our furry (and feathered/scaled/naked) companions.

Sleepy Leia & Kevin Sunday Night

It’s no secret that I love animals.  The problem is, I love them out roaming forests of the wild, but I also love them on the grill.  I know, I know… please don’t hate me.

In an effort to show animals some love, I’m going vegetarian for February.  I will also try and limit my consumption of other animal products, but I’m mainly focusing on meat.  I did this last February (before I began blogging), and it went so well that I have decided to do it again.

Not Vegan: For the love of yogurt

I’m not doing this for weight loss.  (Though if a few pounds decided to fall off, it wouldn’t break my heart…)  In fact, it will probably be even harder for me to not “carb-out.”  It’s still going to require the same willpower to keep myself on-track.

My Loves... & My Clean Laundry

Kevin said he’d participate as well, but if he’s out with the guys or at a work function, steak is definitely still on his menu.  Isn’t he awesome?  This gives me the freedom to cook as much quinoa, lentils, beans, and veggies as my little heart desires.

Last night, in an effort to rid the house of some tempting turkey meatballs, I made this spaghetti squash dinner:

Other news from yesterday, I hit the pool after some pilates in the morning.  My joints would prefer that I swim more often.  Today’s workout will be a 30-minute run and the full body routine I outlined last week.

Weekend Eats

This weekend was pretty darn good.  I didn’t have too many commitments, which gave me more time in the kitchen… to Kevin’s delight, of course.

On Friday, we each had a salad and little wheat flatbread pizzas for dinner.

Saturday we used the leftover flatbreads on the grill, along with hummus, spinach, and grilled eggplant.

For dinner Saturday night, I made shrimp & asparagus pasta with a creamy avocado sauce.  Sadly, it wasn’t yummy.

Sunday’s dinner made up for it though.  I made delicious butternut squash pasta with baby spinach for the win.

Runner Warm-Up

It was hard to get outside today for my run.  I slept in until 6:45, which felt great, but that made getting moving somewhat difficult.  When your spouse starts making cappuccinos and egg sandwiches in his pajamas, it’s hard to throw on your gear and head out in the 30-something-degree weather.  Why put gloves on my hands when I could be holding a latte instead???

Anyway… I went for a tempo run this morning, and it felt pretty good.  Once I got moving, I was happy to be out there.  A 26-minute run feels short n’ sweet after the 1-hour and 30-minute run I had last weekend.  I completed a 3-mile tempo run before heading in to stretch and get my coffee.

While at the beach last week, I recorded this little video of the moves I do to warm up before every run.  I was going to explain the moves more, but once I got home and heard the sound of the ocean in the background, I just couldn’t make myself record over that.

Tiffos Rancheros

I had something else planned for today, but I decided a recipe was in order. Many of you have seen “Tiffos Rancheros” mentioned in a few posts. I always thought the “recipe” was too simple to bother posting.

That was until I made it again for dinner Wednesday night. It’s so cheap, easy, and delicious that I finally decided to share the details. It’s a true 20-minute meal. Yes, that includes wash, chop, and cook time!

**Don’t you hate it when you cook a recipe that’s labeled, “30-minute Meal” but then it takes you almost an hour? Yeah, me too.

This was one of my single-girl go-to meals, so I have created the recipe below as 1 lunch or dinner serving.

Ingredients:

  • olive oil (I use about 2 tsp.)
  • fat-free refried beans (I use about 3/4 cup.)
  • salsa of your choice (I use about 1/4 a cup or so.)
  • jalapenos (pickled or fresh)
  • 1/3 bell pepper
  • 1/3 large onion
  • 2 eggs
  • shredded lettuce

Directions:

  1. Wash and chop your pepper and onion.
  2. Heat oil in non-stick pan, or use more oil in a regular pan. Cook bell pepper, onion, and fresh jalapeno. If using pickled jalapeno, keep that to the side.
  3. As veggies are softening, spread beans on a plate. Heat beans in the microwave until warm. Top with pickled jalapenos (if using) and salsa. Re-heat in microwave until all is warm.
  4. Add eggs to cooking veggies. Scramble the eggs.
  5. Place shredded lettuce on the beans and salsa.
  6. When eggs and vegetables are finished cooking, place egg mixture atop the lettuce. Enjoy!

Oh, and because this is such an egg-cellent post (sorry… that was really bad), I have to share yesterday’s breakfast with you. It’s eggs, spinach, onion, and mushroom on a wheat English muffin. Yum yum yum!

Rest Please!

“Rest Please!” That was my body talking. My hips have been hurting since my long run on Sunday. Since then, I did yoga + core work Monday, 40 min of intervals on the bike + core work Tuesday, and a 3-mile run Wednesday.

But then my body spoke up. My hips are still hurting, and my run wasn’t so great. 3-mile runs have become easier for me now, but yesterday’s three miles were downright hard!

So what does that mean? It means I have to take an unplanned rest day today. I’m going to stretch out my hips and pout. I hate skipped-workout guilt. It’s okay; I’ll get over it. I know my body needs the day off, but it still stinks.

Speaking of workouts, this is the plan for the coming weeks…

That’s it for workouts, but for those of you who read my little rant about the lack of fruit/veggies at office parties yesterday, this is what was at the office. Yes, that’s cake next to biscuits and gravy.
