Moving onto the yum stuff…
I have had a rice cake with or without peeb (peanut butter) before my daily workout. Then, at the office, I’ve had 1/3 cup of oats with 1/8 cup walnuts, and 1/5 cup of pumpkin. I may add a few more oats later in the week.
I was supposed to eat salad all week, but carbs were calling to me on Monday. Soooo I had a bread bowl of veggie soup from Panera. Later I learned that the bowl alone has 590 calories. Yipes! Oh well – it’ll be an Asian themed salad with edamame and snow peas for the rest of the week.
This tea picture came out funny-looking due to the florescent lights in the office. I think it’s symbolism for my soul drowning in this cubicle.
Snack has been exactly the same as last week: apple + peeb. I’m so happy for farmer’s market apples!
Last night, Kev and I split a big butternut squash. I couldn’t eat all of my half, probably because I munched on TJ’s Bistro Biscuits, a spoon of peen, and some apple juice before dinner. Leia would have gladly gone for my extra portion if I let her!
Squash just never gets old…

I’ve bought one or two squash and a buttload of Libbys canned pumpkin, but I haven’t found my perfect carving pumpkin yet heehee Love your eats! Happy WIAW!

I’ve purchased approximately 8 cans of pumpkin this season and 5 squashes…and I’m just gettng started. Faves are canned pumpkin, and butternut & acorn!

I need to go to Panera for that bread bowl. I think you could put anything inside a bread bowl and it will be that much better.

Agreed – I like the way you think! Actually, if you have an Atlanta Bread Co near you, their bread bowls are even better (if you can imagine)

I’ve always wanted a Panera bread bowl but have never gotten one! They just look so delicious

I’ve probably already baked/cooked with pumpkin about 10 times and am about to roast up a spaghetti squash for dinner tonight

I am planning to make a pumpkin-y chili and serve it inside of mini pumpkins soon! AH I am so excited!!!
Also I love spaghetti squash, it rules my life.
My mother in law makes a meaaaan butternut squash soup for thanksgiving every year

Ooh that bread bowl looks like THE ONE!! I haven’t had one of those in aaaages! :/ Also Leia’s little head in that last pic has me cracking up! haha! She is staring that squash DOWN! lol! So cute!

I was lucky to have a friend give me several butternut squash. I’m out though and need to buy some soon – and kabocha as well. Prob my fave squash actually.

We just had an acorn squash for dinner last night…made me feel like fall! I’ve been loving mixing pumpkin in my oatmeal lately too…fall again

I think I like butternut more for cooking in things, but for eating plain, I really like acorn. Not that either is ever a bad choice…

Your oatmeal is so orange! i put so many spices in my pumpkin oatmeal is always looks brown. I’ve never roasted a whole squash before. It’s pathetic. My excuse has always been that I’ve never lived anywhere with a proper oven but that’s about to change. I think butternut will probably be first on my list.

I love winter squash. I was eating on a huge butternut one last week and have an acorn squash I need to roast this week. Orange veggies are my favorite! Love the comment about the flourescent lighting. So true, I seriously think people would like work better if there was better lighting

That bread bowl veggie soup looks oh so good, too bad it had all those calories! Why must everything so good have so many calories?
I’ve purchased two small pumpkins today, but for decorations and not to eat! I’ve never used actual pumpkin from a pumpkin before in my cooking, just the canned pumpkin!

Pumpkin has been a daily addition to my diet as of a couple of weeks ago! I have a acorn squash sitting on my counter that is just waiting to be inhaled. I want to roast it and have it for breakfast one of these mornings. I need a good recipe…Do you have one? Um that bread bowl looks awesome. Perfect for a rainy fall day!

I had one for a turkey stuffed acorn squash that was fabulous, but I lost it. I usually just cut in half, roast plain, and eat.

That bread bowl! I haven’t had one in years. Gosh, they are amazing. I made a spaghetti squash last week, but that’s it for squash so far this season. I need to get a butternut and roast it, though cause they are my favorite.
